I make a LOT of pizzas using Flat Out wraps! Tonight's: Pesto Artichoke Chicken! I love them and they taste JUST like a thin crust pizza, but stay well within my limits. 😍 438 calories, 38g protein, 38g carbohydrate, 16g fat, 7 WW Smart Points.

1 Any type of Flat Out Wrap (Light sun-dried Tomato Basil, low fat light original, etc)
1 tbsp low fat ricotta cheese
2 tbsp homemade Basil Pesto
1/2 cup canned Artichoke hearts
2 tbsp diced onion
1/4 cup diced mixed bell pepper
2 tbsp fresh chopped mushrooms
3 oz. boneless, Skinless Chicken breast
2 tbsp shredded reduced fat low moisture part skim mozzarella
1 tsp reduced fat grated Parmesan
Salt
Pepper
Bake at 350 for about 12 minutes

Homemade Basil Pesto! I wanted some with fewer calories and less fat than what I was finding in a jar, it's simple to home make a lighter version! 51 calories (2 tbsp), 1g protein, 1g carbohydrate, 5g fat, 2 WW Smart Points.

3 cups fresh basil
1 cup fresh spinach
1/4 cup canned chicken broth (low sodium)
2 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp minced garlic (2 cloves)
2 tbsp walnuts
1 tbsp low fat ricotta
1 tsp reduced fat grated Parmesan
1 tsp kosher salt
1/4 tsp crushed red pepper flakes
Blend! Makes about 8 servings (2 tbsp)

Egg mixture: 12 servings liquid egg white, 6 servings 99% liquid real egg product, hot sauce, salt, black pepper, garlic powder.
1 cup shredded reduced fat cheese
Back at 350 for about 60 minutes
