Harnessed – James Boag and James Viles. An intimate dining experience like no other was served to a select few as part of the Melbourne Cup Carnival, @FlemingtonVRC, in the @jamesboagau marquee on Derby Day. Part dining, part installation, this sensational lunch experience entertained as James Viles @biotadining and @chefriles prepared and plated dishes in front of us with a rhythm and precision that was nothing short of mesmerising. James, a master at storytelling, highlighted the sourcing of each main ingredient and brought to life the producers and farmers that contributed to each dish. The menu included Raw Ikijime Spike Fish, Southern Calamari with Wild Sea Lettuce, James Boag’s Premium Beer and Parsnip Icecream, involved guests ‘harvesting’ from the hanging dried seaweed to use as seasoning, and saw James whipping dry iced meringue as part of a dish of Raw Local Honey, Almond Crème and Wild Spring Flowers. Perfectly accompanied by glasses of Premium Beer, James Boag’s ethos of harnessing the wild landscape of Tasmania was not only proved with their beer, but complimented in this incredible menu.
