Obsessed with these easy Spiced Chickpea & Tahini Stuffed Sweet Potatoes πŸ˜€ Such a great veggie main! To make simply roast small sweet potatoes in a 180Β°C oven for 45 minutes, or until soft and cooked through. Cut in half and scrape about half of the sweet potato flesh out of the peel using a spoon (save for mash the next day!). Spoon chickpeas (cooked or tinned organic ones that have been rinsed) into the hollowed sweet potatoes and sprinkle with sea salt then return to oven for another 15 mins or so. Add fresh rocket, chopped cherry tomatoes, seeds and a drizzle of my cumin-tahini sauce (combine 2 tbsp tahini, 1 tbsp Dijon mustard, 1/2 tsp lemon juice, 1/2 tsp maple syrup, 1/2 tsp cumin spice, 1-2 tbsp warm filtered water).
