Aaah was lucky enough to have the healthiest and yummiest lunch on my @qantas flight to LA. Ricotta and basil stuffed eggplants with a Napoletana sauce. It was so nourishing. Busy popping my travel essential vitamins and green juice as we speak post flight ๐Ÿ˜€. So excited to be back for #LA #Qantas

Yummm! My Chai-Spiced Granola makes the whole house smell amazingggg. I love to serve mine with Greek yoghurt, a sprinkle of cinnamon and some fresh berries. Your breakfast tomorrow? To make: just preheat oven to 180ยฐC. Place 2 cups mixed nuts and seeds in a bowl. Stir in 1 tsp chai spice and 1 tsp cinnamon. Pour 1/3 cup melted coconut oil over the mixture, then drizzle over 1/2-2 tbsp maple/rice malt syrup (depending on sweetness). Stir until well combined. Spread out evenly on lined baking tray and bake for 15-20 minutes or until golden. Remove from oven and allow granola to cool for at least 10 minutes โ˜บ๏ธ www.jessicasepel.com

Curried kale!! This is one of my go-to easy veggie sides. So simple to make!! Just heat 1 tbsp coconut oil in a non-stick frying pan over medium heat. Remove 1 bunch kale leaves from the stem and chop into small pieces. Add the kale to the pan and season generously with sea salt. Sprinkle 1 tbsp curry powder and then add 1/4 cup hot water, continue to fry until cooked. Garnish with some flaked almonds if you like. Serve with protein of choice! Easy? BEST side. Crispy kale chips, crispy baked rosemary sea salt chickpeas and roasted red onion. Sprinkle it on your salads!!!! To make crispy chickpeas just add 2 cups cooked chickpeas (if canned, drain and rinse first) on a lined baking tray. Drizzle generously with olive oil and season with sea salt and rosemary sprigs. Roast in 180 degree Celsius oven for 20-25 mins or until golden and crispy. More easy veggie recipes on my blog ๐Ÿ˜€www.jessicasepel.com
