Let's talk about how to customize this EASY TACO SOUP and make it your own, shall we?

MEAT: I really love using ground beef in this recipe because it adds so much flavor. But you can totally use turkey or shredded chicken, too! If you have leftover rotisserie chicken this soup is a perfect way to use it up! Or skip the meat entirely and use extra beans or meatless crumbles for a vegetarian version.

SPICINESS: The base of this soup is not spicy because I have little ones, but you can totally make it spicier. Use a darker chili powder and more of it, add more cayenne pepper, add a spoonful of your favorite spicy salsa or a can or two of green chiles.

TOPPINGS: This is where it gets fun 😉 Avocado, sour cream, cheese, cilantro, your favorite salsa, a dollop of jalapeño ranch?

The only part of this recipe that requires "work" is browning the meat and you can totally handle that. We're having this for dinner and I want you to add it to your menu for the week, too! Four ways you can prep for this GROUND TURKEY SWEET POTATO SKILLET 🙌
1) Peel and chop your sweet potatoes ahead of time (before work, during nap time, on your meal prep day.
2) Make it on Sunday for your lunch throughout the week.
3) Double it, freeze half for later.
4) Make it ahead of time (day before, during nap time, during lunch) and reheat for dinner.

Let's talk about the COOKING METHOD for this recipe. You cook it all in one pan, browning the ground turkey first, then adding in sweet potatoes and spinach and COVERING the pan.

Covering the pan helps to trap the steam in the pan and cook the potatoes as if you were using a veggie steamer. They cook quickly until fork tender and then you toss in your spices.

And it takes less than 10 minutes to put together. No cooking required. You need:
• 2 apples, cored and chopped
• 2 bananas, sliced
• 1 cup grapes, halved
• 1/2 cup dates, chopped (optional)
• 1 cup heavy whipping cream whipped on high with 2-3 tablespoons honey added in at the end
