A very #ModernLunch today thanks to @allisondaycooks’ beautiful new cookbook! I packed up the Rustic Spelt Quiche (with green onion instead of asparagus because that’s what I had), Cashew, Coconut and Banana Power Snacks (made into toddler-sized, pop-in-your-mouth bites) and Berry and Apple Oat Squares and took the tray to a friend’s for the tastiest lunch I’ve had in a long time!

We ❤️ St. Patrick’s Day, but it’s hard not to with a last name like Scott. On the menu today: cheese toasties for lunch, and corned beef, cabbage and carrots for dinner served alongside this Kale Colcannon from Oven to Table (pg.175). Even if you don’t make the beef, the potatoes are a family favourite and can be made cheesy with the addition of some grated Irish cheddar. ☘️

Here’s a 6-ingredient, no-bake cookie recipe that’s perfect for lazy weekend mornings. Made with everyday pantry ingredients (oats, chocolate chips, butter, milk, sugar and cocoa powder), and just one pot and one baking sheet it’s perfect for keeping four-year-olds entertained. Recipe in the comments! (Mom’s version in the first pic, kid’s version in the second).

This feed-a-crowd dinner is perfect for March break when you might have more than your own kids around the table. It looks time-intensive, but it’s an under-40 minute meal if you take the following shortcuts: cook the brown rice in an Instant pot, if you have one. Make hoisin pork using bottled sauce but fancy it up by sprinkling green onions, peanuts and sesame seeds over top. Feel free to buy store-bought slaw (but ditch the accompanying sauce and make your own by mixing lime juice, sugar, oil and fish sauce) and serve with a side of avocado slices sprinkled with your favourite seasonings and/or seeds. Serve family-style with a pile of plates on the side.

Would you believe I’ve never had a cup of coffee in my LIFE? Like ever. But tea? We are best friends and go back a few decades. While I do enjoy a cup in the morning, I find myself craving it around 3:30 pm now. It *might* be because my youngest has been waking up between 4:30am-5:30am every morning for THEEE AND A HALF YEARS, but I don’t really know for sure. Regardless of the reason, it’s about time to pour a cup. TGIF!
