One of our Assistant Professors, Dr. James Mendez, spent the fall semester with his family in Tallinn, Estonia, as a Fulbright Scholar. Pretty cool, right? While abroad, Mendez taught a class and studied the basic material properties of chitin, a naturally occurring polymer found in Estonian mushrooms 🍄 While Mendez’s research focuses on the basic material properties of chitin, the applications are far reaching in modern medicine and electronics.
