// I N T U I T I V E E A T I N G // I’m often asked how I keep in shape and what kind of diet I follow. The answer is that my kids and my job keep me on my feet 99% of the time and I eat whatever and whenever I want as long as I feel satisfied and good about it. I made this veggie chilli not because I think my family should eat less meat but because I think it will taste fantastic and fill us with nutrients and energy. We are all born intuitive eaters and its one of our most important assets- nature’s clever little way to keep us fit and healthy- if you’ve lost it then try and reconnect with this innate ability because the best diet you and your family can ever follow is one that is fresh, simple and satisfying and leaves you feeling good about yourselves. Don’t dwell on what others eat, or whether food is β€˜good’ or β€˜bad’ for you, whether you should eat more of β€˜this’ and less of β€˜that’ and instead get to know your own body and what makes it tick. Packed full of flavour and nutrients it’s exactly what our bodies need as the weather cools and the cold season nears. I have used cauliflower today but it’s super versatile and works equally well using squash, potato or aubergine as the main veggie and for anyone weaning its also fantastic blended down to a rough purΓ©e for babies’ first tastes. RECIPE
Feeds 2 adults and 2 kids

500g peeled and roughly chopped squash
500ml vegetable stock
3 garlic cloves, peeled but left whole
50g butter
50g cheddar cheese plus 100g for the top
1-2tsp Dijon mustard
250g macaroni
__________________________________________________
Preheat the oven to 220Β°C.

Place the butternut, stock and garlic in a saucepan and bring to the boil. Reduce to a simmer and cook for 20minutes until the squash is tender. Add the butter, 50g cheddar and mustard. Allow it to melt and then remove and place in a blender. Blitz into a smooth sauce.
Meanwhile cook the pasta for just 6 minutes and drain.

Place the pasta in a large ovenproof dish. Top with the sauce and then sprinkle over the remaining cheese. Place in the oven for 15minutes or until golden and bubbling. Serve immediately. [Note: if making ahead then keep the sauce and pasta separate otherwise the pasta will start absorbing the sauce in the fridge and the final dish will end up dry]

G R E E N T H A I C U R R Y- one of my biggest aims with @ieatmypeas is to inspire everyone and anyone to cook simple, fresh and nutritious food for their families and know that you don’t need an ingredients list as long as your arm to cook amazing, flavoursome food. This Green Thai is a great example- you literally chuck all the herbs and spices into a blender and your sauce is done. Fry some chicken (or prawns or tofu) along with whatever veggies you like and add the sauce. Bring to the boil and then simmer for 10 minutes. And that’s all you need to do. So much tastier and vibrant than buying a ready made paste from the supermarket shelf plus the girls love popping all the ingredients in the blender and watching it whizz around and magically change into the most glorious green sauce. Green Thai Curry Sauce
3 spring onions, roughly chopped
3 garlic cloves, roughly chopped
15g fresh ginger, prepped weight
1 heaped tsp curry powder
25g fresh coriander, stalks and leaves
25g fresh spinach
2 tsp soy sauce
2 tsp fish sauce
1 x 400g tin full fat coconut milk
Put all the ingredients in a blender and blitz to a purΓ©e. Use as described above.

T E R I Y A K I C H I C K E N- everyone needs a quick stir fry recipe up their sleeve and this is mine. It works well with beef and salmon but my favourite is chicken. Use thighs as they are far more succulent and full of flavour. I generally serve with rice, mushrooms, broccoli and cucumber ribbons but you could substitute any of your family’s favourite veggies instead... or serve with noodles.

RECIPE
500g boneless chicken thighs, cut into 1-2cm pieces
3 tbsp soy sauce
2 tbsp honey
30g grated fresh ginger (prepped weight)

1 handful broccoli florets
8 chestnut mushrooms, sliced
1 cup rice

1-2 small cucumbers, cut into ribbons

METHOD
Place the chicken in a bowl with the soy, honey and ginger and marinade for at least 2 hours or overnight.
When ready to make cook the rice according to manufacturers instructions and set aside.
Heat 2 tbsp sunflower oil in a large frying pan or wok and add the chicken (with all the marinade), mushrooms and broccoli. Stir fry for 2-3 minutes and add 2 tbsp boiled water and scrap the wok to make sure the marinade doesn’t burn into the surface but coats the chicken and veg. Stir fry for about 2-3 minutes and repeat. Cook for a final 2-3 minutes until everything is coated and cooked. Remove and serve immediately alongside the rice and cucumber ribbons.

C O C O N U T V E G G I E C U R R Y - I can’t get enough of this creamy coconut curry. I’ve cooked it today with πŸ† and chickpeas but it works equally well with squash, potato or cauliflower. It smells incredible and feels both wonderfully comforting yet virtuous and wholesome with so many veggies and spices. All in all you need this in your week. RECIPE
2 tbsp sunflower oil
2 large aubergines or 6-8 Asian aubergines, cut into 1-inch chunks (or 1 small cauliflower/ 2 potatoes/ 1 squash or 1 small pumpkin)
1 tsp cumin seeds
1 tbsp curry leaves, roughly chopped [optional] β€”β€”β€”β€”β€”β€”β€”
For the curry paste:
1 red onion, roughly chopped
15g prepped ginger, roughly chopped
3 garlic cloves, roughly chopped
1 tbsp curry powder
1 tsp ground turmeric
2 tsp tamarind purΓ©e
1 tbsp tomato purΓ©e
β€”β€”β€”β€”β€”β€”β€” 200ml tomato passata
1 x 400ml tin coconut milk
1 x tin chickpeas, drained

Heat the oil in a large saucepan. Add the chopped aubergines (or veg of your choice). And fry for 5 minutes. Meanwhile, put all the curry paste ingredients in a food processor and blitz to a paste. After 5 minutes add the cumin seeds and curry leaves (if using) to the frying veg and continue to fry for another minute before adding the paste. Cook for 2 minutes and then add the passata and coconut milk. Bring to the boil and then cook on a low simmer for 30minutes. Add the drained chickpeas and cook for another 10 minutes. L U N C H B O X #2- πŸ’•πŸ’•homemade sconesπŸ’•πŸ’• are super versatile and one of the easiest things to bake with kids. Maddie and I made these little heart shaped ones this afternoon and since I ran out of self raising flour half way through weighing everything out they are made with spelt flour. The spelt really works and gives a beautiful nutty flavour and makes them a perfect alternative to a bread roll in the girls lunchboxes. I’ve buttered them and added a pot of cheddar cheese and an appleπŸ§€πŸŽ (plus some red and yellow pepper in the veggie pot). In their snack box they have a hard boiled eggπŸ₯š for protein (peeled but left whole) and some mixed berries in their fruit pot. πŸ“β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”
SCONE RECIPE

Makes 8 small scones

120g self raising flour
80g spelt flour
1/2 tsp baking powder
50g softened butter
1 heaped tbsp caster sugar
110g full fat milk plus extra for brushing

Preheat the oven to 220Β°C and line a baking tray with baking parchment. Place both the flours and the baking powder in a large bowl. Add the butter and use your fingertips to rub it in until you have what resembles fine breadcrumbs. Add the sugar and milk and mix until a soft dough forms. Knead it together briefly and then turn out onto a floured work surface. Using your hands push it out until it’s around 2-cm thick. Use whatever cutter you like (here Maddie chose to use a heart one from @ikeauae) and cut out as many scones as possible placing them directly on the lined baking tray as you go. With any excess dough remould and cut out further scones until you have used all the dough. Brush with milk and place in the preheated oven for 12minutes or until slightly risen and golden. Remove and place on a wire rack to cool. β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”
