A quick snack before dinner!
Homegrown #purplepotato chips 🤩💜
Here’s the dEATs
Thinly slice your potatoes
Place in cold water and then drain!
Pat dry with towels, place into a bowl, rub with your favorite oil (I use avocado 😉), salt/pep, & dried garlic!
Bake in a 425 degree oven for about 15-20 mins depending on thickness of your chip!
Pair with your favorite dip, we’re using my homemade ranch 😁, and dig in!

Being it’s the first Friday of the summer, I decided to celebrate with #icecreamsandwiches 😎🤤
Walnut Butter #allthegoodfats Cookies + @cadoicecream Deep Dark Chocolate #dairyfree #soyfree ice cream 🙌🏻
If you’ve been following along on my stories the past week then your probably aware that I’m super obsessed with this ice cream 😜 like, can eat the whole pint without blinking obsessed 🙊 but when you’ve gone over two years without that delicious creamy heaven that is ice cream than I think you have every right to indulge your self 💁🏻‍♀️
Now for the cookies, I whipped these babies up after I made some homemade walnut butter 🤓 so creamy!!!
Here’s the dEATs on the cookies 👇🏻
- 1c walnut butter (you can use any kind of nut/seed butter you like of course, just make sure it’s creamy 👌🏻)
- 1/2 an 🥑
- 1 flax egg
- 1/4-1/2c maple syrup (depends on how sweet you like your cookies)
- 1tsp alcohol free vanilla extract (regular would work as well, or you can sub vanilla powder!)
- 1/2c coconut flour
- cinnamon
- 2tsp gluten free baking powder
- 1/2tsp pink salt
- 1/4c chopped raw walnuts
Preheat oven to 375
Mix your wet ingredients!
Mix your dry, minus the walnuts!
Add dry to wet, mix a little, then add in your walnuts! Finish stirring and then use a cookie scoop to place onto a parchment lined baking pan. Bake for about 10-12 mins then set aside to cool!
Once cooled scoop your favorite ice cream onto one cookie, then press another cookie on top! Place in the freezer for about 30mins or overnight.
The perfect #summertreat with all the good healthy energy boosting fats our kids (and us 😉) need to survive the longer and hopefully 🤞🏻 hotter days!

Busy day, called for a simple dinner!
Golden Beet Pickle Pesto Grilled Cheese 😜🤤🙌🏻😎
Here’s the dEATs
- Roast 2 small golden beets by rubbing with oil, salt, & pepper than wrap in foil, and roast in the oven at 425 for about 30-40mins or til tender! Let cool then rub off the skin with your hands + a towel 😉 set aside!
- Thinly slice a few pieces of your favorite cheeses, I used @kerrygoldusa Reserve Cheddar + @traderjoes Cheddar Gruyere 😋
Assemble your sandwich!!!!
I used @silverhillsbakery Sprouted Power bread, smeared on my families favorite pesto 🤓 Spinach Sunflower Power, topped with cheeses, then beets, pickles (@sonomabrinery Bread + Butter 💯), and extra cheese 😝 Toast on your oiled pan until crispy and melted! Toss into the oven for an extra gooey center 🙃
Like I said, simple dinner with a side of tomato soup 👌🏻

Today’s feature included
- leftover roasted honey mustard cauliflower
- leftover garlic butter roasted mushrooms
- homegrown Swiss chard
- sweet pepper
- grated @kerrygoldusa Aged Cheddar
- Pesto Mayo ( emulsified pesto that’s as thick and creamy as mayo 😋)
- toasted @rudisorganic bread

It might not officially begin until June 21st, but that won’t stop me from getting the #summervibes started 😜
Chili Cheese “Dog” topped with an egg, because then that makes it alright to eat this for a late breakfast 😉😎
Here’s the dEATs
-warm bun
- grill @fieldroast Frankfurter
- warm a can of @amyskitchen Organic Medium Chili w/ veggies
- slice a radish
- fry an egg (my hubs likes his over med 👌🏻)
- grate your favorite cheese ( I used @traderjoes #raw Cheddar)
Now build, start by adding mustard to your warm bun, then add some chili, your frankfurter, top with more chili, cheese, egg, sliced radish, and finally a few pickled jalapeños 🤩🤤🙌🏻
Nothing says summer more than hotdogs + burgers on the grill, and when you top those with chili + cheese, well than we’ve got a party going on my friends 😆💃🏻🌭

Using this mornings breakfast to make a quick and delicious snack for during the week!
Chocolate Chip Raisin Oatmeal Cookies 🤩😋🤤
Here’s the dEATs
First start off with leftover oatmeal 😉 I used my daughters new favorite and current weekly meal of Vanilla Pudding Oats 🤓
Take milk (I used a #local #raw whole milk) + water + frozen riced cauliflower + pink salt and bring to a gentle boil. Add in your oats + hemp seeds and cook for about 10mins or until creamy 👌🏻 Remove from heat and add in your vanilla! I then set aside any leftovers or sometimes I’ll make extra just to bake some quick cookies 😎
Once cooled you can add in
- 1 egg (flax or regular works!)
- cinnamon
- maple syrup
- baking powder
- almond flour
- coconut flour
- raisins
- Chocolate chips
Stir and then bake at 375 for about 10-14mins or until golden 👌🏻
Taste like a coconut macaroon 😆
Plus, did you notice the veggie inside these cookies 😏 no one else will either 😜 #momwin

Trying to make up for my lack of creativity this week, so I made a new take on a classic 🤓
Mini Sweet Potato Pizza topped with #vegan Spinach Sunflower Power #pesto + butter rosemary sautéed mushrooms + shredded #raw cheddar + grated Parmesan 🤩🤤😋👌🏻
Simply perfect for a quick lunch or a fun build your own pizza night with the kids #momwin
Heres how I did it 👇🏻
Wash then dry a large sweet potato. Slice into thick rounds then rub with oil + salt/pepper. Bake at 375 for about 10-15 mins until soft! Remove from the oven and flip! Raise temp to 400 and put back in for another 5-8mins. Then remove from the oven and set aside while you assemble your toppings!
For the mushrooms I melted Unsalted butter on medium high heat then added in my mushrooms with salt + dried rosemary (you can use fresh as well!) and cook until the juices release and the mushrooms brown 👍🏻
Grate or shred any cheeses!
To make pesto blend together the following
- raw baby spinach
- raw sunflower seeds
- 1 garlic clove chopped
- salt/pep
- lime or lemon juice
- oil (I used 🥑)
Place first 5 ingredients in a food processor and blend until completely broken down! Then add in your oil and blend until creamy 👌🏻
To assemble pizzas
- top sweet potatoes with pesto
- top pesto with mushrooms
- top mushrooms with cheese
Turn the oven to 425 and bake for 10mins! Finally broil for about 1-2 mins to brown the cheese 😉

Between feeling like I’m being abused from the inside all week and trying to still adult, this week has been a rough one to say the least 😅 Hopefully this weekend will be a nice restart, lord knows I need it 🙃

It doesn’t need to be fancy, it just needs to be #FUN 😆👍🏻
Dinner last night didn’t turn out the best 😒 so I made my daughter a super simple and easy snack to fill her belly up for the night 😉
Using her favorite @dylbug_ plate I created a “Mermaid Queen” for my water loving kiddo, also the theme this month for Dylbug is “Mermaids and Pirates” so I thought I’d join in on all the creative fun 🤓
Here’s what I did
- created a mermaid tail by using baby spinach leaves
- placed a sardine on top to create a body
- broke a few @newmansown Oragnic Spelt pretzels apart to create a Queen trident
- pomegranate seeds for a simple headband “crown”
And no, the spinach was not eaten 😑🤷🏻‍♀️ She’s in a big #veggierefusalstage that basically means, hide the veg or don’t even bother 🤣
All that matters is she was exposed to it and that she is aware that the food I make isn’t going to change just because “she doesn’t like her vegetables” 👍🏻
