Hey friends!!! If you’ve been following me for awhile, then you probably know I love making meals with real colorful whole foods πŸ™ŒπŸ» and I’m definitely not the only one πŸ˜‰
The lovely mama, Jennifer, at @kidseatincolor is a Dietitian who believes in exposing her 2 boys, better known as M&m ☺️ to all the fun and colorful plant based food she can find! Between adorable lunchboxes like the one above πŸ‘†πŸ» to making fun videos of them both trying out new foods! She also has great tips and suggestions for exposing your kiddo to more whole foods πŸ™ŒπŸ»

Breakfast
Cloudy morning + a tired mama equals a simple meal for the kiddo!
On our @boboandboo πŸ’• Divided Plate we have,
- Cereal (puffed kamut + puffed millet topped w/ dried raspberries, hemp seeds, & organic whole milk)
- chopped 🍍
- Homemade Carrot Applesauce
- Homemade πŸ₯‘ 🍫 Chia Pudding

Dinner
Empty fridge, does NOT have to mean empty bellies!
Using 5 ingredients and a whole bunch of aromatic spices, I created a delicious Carrot & Potato Sweet Yellow Curry with tons of flavor and very little prep πŸ˜‰
Here’s how I did it πŸ‘‡πŸ»
Melt coconut oil in a pot over medium heat. Add in diced onion + saffron salt (or plain salt will work!) and sautΓ© until soft. Next toss in a large chunk of chopped garlic. Cook for another 1-2min then start adding in your spices, sweet curry powder + garam masala + coriander + cumin + dried garlic and cook an extra minute. Add in your potatoes & carrots! Stir to coat all the veggies in the spices. Add in about 3/4c water and bring to a gentle boil. Finally add in a whole can of Full Fat Coconut Milk, and bring to a gentle boil again. Lower heat to low and cook covered for about 20-25mins.
Serve with Farro or rice!

So I have a confession to make, I still haven’t went to the grocery store πŸ™ŠπŸ˜¬ But that didn’t stop me from making this bomb lunch for my family, the above πŸ‘†πŸ» being my hubbys plate (my daughters was the same except with @drpraegers Kale Little’s and deconstructed πŸ˜‰πŸ‘πŸ»)
Here’s what’s in the bowl πŸ‘‡πŸ»
- chopped romaine
- chickpeas
- chopped red pepper
- @hilaryseatwell Curry Veggie Burger (no soy, no rice, and no egg πŸ’―)
- Spelt Tortilla Chips rubbed with olive oil + porcini salt πŸ‘ŒπŸ» then cooked in a dry skillet until both sides are brown & crispy!
- Kalamata Olive Dressing (homemade #veganmayo + kalamata tapenade + Lime juice + garlic + coriander + Pepper blended until creamy πŸ™ŒπŸ»)
- Sprinkled with some of that glorious Dukkah seasoning
Simple and utterly satisfying!!!

Dinner
When a taco bowl meets a stir fry, this πŸ‘†πŸ»is what happens!
After ditching my #adultduties for more fun things like sand and sun 😎 I then came home to find an empty fridge, and two very hungry bellies waiting in the wings πŸ™ƒ Que, grab what I can and make it work πŸ‘πŸ»
Here’s the deets on the bowl πŸ‘‡πŸ»
- chopped romaine
- roasted Dukkah cauliflower β€œrice” (cauliflower chopped into rice sized bits, mixed with oil + dukkah seasoning, then roasted in the oven until slightly browned)
- caramelized corn & cabbage (minced ginger + garlic sautΓ©d in toasted sesame oil for about 30seconds, add in diced carrot and cook another 5 mins. Add in thinly sliced cabbage and cook in med-high until cabbage starts to soften. Add in your corn (fresh or frozen) and cook until the mixture is browning! Finally add in coconut aminos and cook another 5-8 mins.)

Heading to the beach this beautiful sunny morning, so the hubs got a super quick and simple breakfast, Smashed Avocado on a Sourdough English muffin drizzled with @chosenfoods avocado oil then sprinkled with @traderjoes Dukkah seasoning + @traderjoes Everything but the bagel seasoning + Parmesan cheese πŸ˜πŸ˜‹πŸ‘ŒπŸ»

Getting some inspiration from a fellow mama, I made pancakes for us on this rainy winter day ☺️
Butterscotch Pudding Pancakes topped with diced 🍌 + raisins + maple syrup πŸ‘ŒπŸ»
After the lovely Charlotte over on @george.eats posted a butterscotch pudding recipe the other day I knew I had to make it, but y’all know me πŸ˜‰ I can never just recreate the recipe, gotta put my own spin it πŸ€“
Here’s how I did it πŸ‘‡πŸ»
Mix together a 2 smashed bananas, 4 flax eggs (1/4c flax meal + 3/4c water), 3/4c buttermilk (@foragerproject unsweetened plain cashew milk + ACV), @artisanaorganics Cashew Butter πŸ’―, 2tbsp coconut sugar, & 1 tsp Vanilla until smooth! Add in 1 1/2- 2c almond flour + maca powder + 1/2tbsp baking powder + pinch salt and whisk until well incorporated πŸ‘πŸ» Cook over med-low heat until bubbles form on the top then flip and cook an extra 1-2mins!
Between the cashew butter and the maca, you’ll never guess there isn’t real butterscotch inside 😎
Served on my daughters favorite @boboandboo Plate + her new favorite princess fork from @kiddobloom πŸ’–

Lunch
When you live in the #pnw and it’s been raining for 5 Days straight 😢 and then the sun comes out for about 5mins πŸ™ŒπŸ» so you run outside to not only enjoy the vitmanin d but to snap a photo of your kiddos lunch πŸ˜‰πŸ˜† #lifeofafoodblogger
Today I whipped up a quick and simple Mac + Cheese w/ Apple slices & Veggie Corn Puffs (seriously delicious, even my husband is obsessed πŸ™ŒπŸ»)
The Mac and cheese was made with 5 ingredients not including salt/Pepper πŸ˜‹
Here’s how I did it πŸ‘‡πŸ»
Boil your pasta and per package instructions, then set aside!
While your pasta is cooking chop into chunks 4 small carrots. Then cook in boiling water until soft, and can be smashed with a spoon! Blend carrots with room temp organic half/half then pour pack into pot. While cooking on low add in your grated sharp cheddar + grated Parmesan cheese πŸ‘ŒπŸ» Add in salt/pep to taste then serve!
Super creamy and absolutely cheesy πŸ€“ I’m talking #bestmacncheese status here people!! Cleaned bowls all around 😁 Plus, you can’t beat that view!

Snack
Trying to combat this horrible cold/flu season with some #immuneboosting #vegan gummies!
After my daughter has been sick plus my husband and myself πŸ˜‘ I decided we needed some extra power to our systems to stop any more sick bugs from entering our household πŸ‘ŠπŸ»
Bring in one of my favorite snacks, Gummies!!!
I used @rwknudsen Carrot Ginger Tumeric juice + agar powder to create these little power houses of immune boosters!
Here’s how I did it πŸ‘‡πŸ»
Bring 1c of juice to a slight simmer then add in 1tbsp agar powder (don’t use the flakes!!!) and whisk until smooth. Turn off heat then transfer to your preferred mold, we used ours from @myfruitshack that come in 4 colors/shapes (green apple, orange orange πŸ˜‰, red strawberry, and purple grape) I used our orange and apple mold then took one of the eye droppers that come with the kit to transfer the gummy mixture from pot to mold πŸ‘ŒπŸ»
Plus they come with trays so don’t worry about making a mess πŸ™ŒπŸ»
Pop into the fridge until set, about 30mins, and enjoy 🧑

The one pictured is my hubbys (my daughter had an egg + romanesco + cheese, since my hubs can’t eat eggs 😭)
Here are the deets πŸ‘‡πŸ»
A warmed @traderjoes organic olive oil tortilla filled with roasted red potatoes + a sautΓ©ed mixture of chopped kale, chopped oyster mushroom, sliced sweet peppers, @schultzsgourmet Cooking Hot sauce, & @traderjoes Dukkah blend + sliced Gouda cheese πŸ˜πŸ˜‹πŸ’― rolled and wrapped then toasted until browned! Just make sure to let it cool before trying to snap a pic, otherwise you’ll end up with some toasty hot palms πŸ™ƒπŸ€£
