When your down to the bare minimum, this πŸ‘†πŸ» is dinner for your hubby + daughter!
Yellow Rice Bowls
- 1 with chopped spinach + grated cheese + diced bell pepper + @nancysyogurt Cultured Sour Cream + spelt tortilla chips served in her blue @boboandboo bowl w/ her favorite @constructiveeating spoon + shovel πŸ‘ŒπŸ»
- the 2nd is more of a salad bowl with rice on top + grated cheese + diced bell pepper + sour cream + pita chips + @pickledplanet Kimchi πŸ‘ŠπŸ»

Last Nights Dinner πŸ’―
When your down to your pantry staples (Saturday market can't come soon enough πŸ™πŸ») and have no clue what to make for dinner, then you have a delivery that changes everything πŸ˜‰πŸ™ŒπŸ»
Probiotic Chickpea Pizza topped w/ sundried tomato cream cheese + leftover roasted cauliflower/potatoes + chopped spinach + shredded #grassfed sharp cheddar πŸ˜πŸ€€πŸ˜‹
This is simply the best crust to make in a quick minute without much prep except for possible toppings πŸ‘πŸ»
Using the standard 1x1 ratio I mixed 1c Chickpea flour with 1/2c πŸ’¦ + 1/2c @nancysyogurt Probiotic Plain Whole Milk Kefir πŸ€“ Mix with salt and seasonings of choice and you have magic in literal minutes!!!
Pour into a oiled and hot pan on med heat and cook until brown on the bottom! Gently flip, and continue cooking the other side for about 1-2 minutes πŸ‘ŒπŸ»
I topped my hubbys w/ a mixture of @traderjoes sundried tomatoes + @nancysyogurt cultured cream cheese, then roasted cauliflower + potatoes leftover from our dinner the previous day, chopped baby spinach (fridge staple!), and a nice sprinkling a cheese 😎 Pop into the oven to melt everything together and then serve to your #hangry masses!

Chocolate Almond Butter Carrot Oats topped w/ #grassfed whole milk yogurt + sautΓ©ed cinnamon #local sweet potato & plantain + a drizzle of maple syrup πŸ˜‹πŸ’―
The oats are loaded with soooo many goodies it's hard to keep track but here it goes πŸ’πŸ»
- Oats
- grated carrot
- mashed plaintain
- mashed banana
- carob powder
- pink salt
- flax meal
- chia seeds
- local ghee

- raw creamy almond butter

Creamy Potato + Mushroom Soup πŸ’―
Simple and done in under 40mins! I wanted to make something warm tonight as we have had 60degree weather all day and I had some potatoes that needed using πŸ˜‰πŸ˜‚ #momwin
I decided to top the soup with some pop of green color by making some cheesy roasted broccoli chips πŸ˜‹

Toddler Breakfast πŸ’™
We are feeling all the fall weather here in the PNW with cold + rain + fog this morning, so oatmeal to the rescue!!!
Spaghetti Squash Tumeric Oats w/ whole milk #grassfed yogurt + @traderjoes Carrot Applesauce + chopped #local 🍐 + Hemp "sprinkles" πŸ˜‹
The oats are simple and as follows:
- Unsweetened Almond milk
- water
- coconut oil
- cinnamon
- nutmeg
- tumeric
- cooked spaghetti Squash
- Oats
- smashed banana
- 1 egg
- salt/pep
Melt your coconut oil in a medium pot then add in cinnamon, nutmeg, & tumeric. Stir and cook for about 1mintue! Add in your milk, water, salt/pep, stir, then add in your smashed banana. Cook on med-low for about 3mins then add in your squash and oats! Stir and turn the heat to low. Cook for about 10mins then add in your whisked egg! Cook for final 2 minutes! Top with your favorites & enjoy! #eatyourveggies #boboandboo #quickandwholesome

Graduation Breakfast 🎊
Being that today is a big day for my little girl, I decided it definitely deserved a special breakfast to start her day πŸ’ž

Almond Butter + Jelly Stuffed French Toast w/ a sunny side up egg & blackberry sauce πŸ˜πŸ’―πŸ’œ Using our new #dylbugdressup plate I turned her French toast into the perfect celebration dress + some fancy egg white "shoes" + a blackberry "bow" + a wand of sunshine πŸ˜‹

Simple and best of all, it put a giant smile on my little girls face #momwin #startyourdaywithasmile

For the French Toast I took ✌🏻pieces of @franzbakery Organic Hemp Seed bread and slathered one side with raw almond butter and the other w/ a mixture of @nancysyogurt Cultured cream cheese + @croftersorganic Super Fruit spread πŸ‘ŒπŸ» Slap your bread together then dip in an egg + half/half mix! Pan fry in ghee until both sides are golden πŸ™ŒπŸ»πŸ€€ Hope everyone has a fantastic Sunday!!!

Roasted squash mixed together with spaghetti in a creamy unctuous sauce that consisted of πŸ₯‘ oil + crushed garlic + organic half/half + @nancysyogurt organic cultured cream cheese + shredded #grassfed cheddar + salt + pepper + a pinch of nutmeg πŸ˜‰ Simmered and melted together until your house smells like heaven πŸ™ŒπŸ» Toss in some fresh spinach + fresh corn at the end for some veggie and sweetness πŸ‘πŸ» Total #momwin in every way 😎

Decided to change things up a bit and switched out our normal 🍌 for a plantain to sweeten our oats this morning!
Coconut Plaintain Oats w/ Sliced πŸ‘ + Pan Fried Plantains (in coconut oil) + @nancysyogurt Plain Whole Milk Kefir (last of our supplies 😩) + hemp "sprinkles" + drizzle of maple syrup πŸ˜πŸ’―πŸ€€ Simple yet filling breakfast that will get everyone moving and keep going until lunch (well maybe until snack time 😜) Recipe for the oats πŸ‘‡πŸ» Have a fantastic #friyay my friends 🀘🏻
Coconut Plantain Oats
- 1 can full fat coconut milk
- 1 mashed plantain
- cinnamon (to taste)
- nutmeg (to taste)
- punch pink salt
- 1c thick rolled oats
- 2tbsp hemp seeds
- 1/4 frozen riced cauliflower
- 1tbsp coconut sugar
Cook milk, sugar, plantain, cinnamon, nutmeg, and salt til it comes to a simmer on med-low heat! Add in your oats, cauliflower, and hemp seeds. Lower heat to low and cook for about 8-10 mins!
