my red beet power smoothie is one of the most popular recipes on the blog this time of the year. i love it because it's made with really easy-to-find ingredients. .
here's what you need:
.
1 small red beet (raw), peeled & diced
1 large apple, cored
1 celery stalk
1 cup carrot juice
2/3 cup frozen sliced peaches
1-inch piece of ginger, sliced
(add 1/2 cup water if you need to thin it out) .

you don't need a ton of ingredients to make a good bowl of fried rice. here's a light fried rice recipe (sans soy sauce) that's scented with shallots and turmeric ๐Ÿ˜‹๐Ÿ˜‹

what you need:
.
2 tbs oil
1/2 to 3/4 tsp ground turmeric
1/2 cup sliced shallots
3 cloves garlic, minced
1 tbs minced ginger
4 cups cold cooked rice (preferably from overnight)
1 cup frozen peas, thawed
1 tsp salt (at least)
2 scallions, sliced

make it:
.
heat the oil in a large pan or wok. add the turmeric and stir. add shallots and cook for 3 minutes. add garlic + ginger and cook for 1 minute.
.
pour in the rice, peas, salt, and scallions and toss to mix everything. cook for a few minutes until the rice is heated through. taste and add more salt as necessary. that's it!

i eat cauliflower rice ALL THE TIME, but it's kinda boring if you just stir fry it on its own. highly recommend sautรฉing it with ginger and shallots! SO GOOD. .
here's what you need:
.
1 large head of cauliflower, chopped to florets
3 tbs olive oil
1 1/2 cups diced shallots
2 tbs minced ginger
4 stalks scallions, sliced
3/4 cup frozen peas, thawed
1 1/2 tbs soy sauce
1 1/2 tsp sesame oil
salt to taste

transfer cauliflower florets to a food processor and pulse until you get cauliflower rice. .
drizzle 1 tbs oil into a large pan and add riced cauliflower and a pinch of salt. do this in 2 batches there's too much cauliflower. cook for 3 minutes and transfer to a plate.

heat remaining olive oil in the pan. add shallots and cook for 3 minutes. add the ginger, scallions, and peas and cook for another 2 or 3 minutes. transfer cauliflower rice to the pan, careful to avoid any liquid. season with soy sauce, sesame oil and salt.

i made a version of my cheesy savory oats bowl this morning and it was PERF ๐Ÿ‘Œ๐Ÿผ๐Ÿ‘Œ๐Ÿผ. if you're not on the savory oats bandwagon yet, you've got to give it a go! .
here's what you need:

1/3 cup quick-cooking steel cut oats
1 cup water
2 to 3 tbs shredded white cheddar
salt and pepper
.
add the oats and water into a big cereal bowl and stir. microwave on high at 1-minute intervals for about 3 minutes. mix in the shredded cheese and season with salt and pepper. if you're feeling ambitious, fry up an egg and sautรฉ a few vegetables with virgin/unrefined coconut oil (<--love the flavor). top with chopped walnuts. enjoy your morning bliss.

you can also make this with regular rolled oats, though i prefer steel-cut oats because they have a grittier texture.

first recipe on the blog this year is my creamy, gingery carrot and sweet potato soup!

here's what you need:
2 tbs olive oil
1/2 large yellow onion, diced
2 cloves garlic, sliced
1 1/2-inch piece of ginger, minced
1 pound sweet potatoes, peeled and diced
3/4 pound carrots, sliced
3 cups vegetable broth
1 teaspoon ground coriander (optional)
1 cup chopped cauliflower florets
salt, to taste
1 teaspoon cayenne pepper (optional)

heat olive oil in a pot over medium heat. add the onions and cook for 5 minutes. add the garlic and ginger and sautรฉ for 1 minute.
.
add the sweet potatoes, carrots, broth, and coriander (if using), cover the pot and bring everything to a boil. reduce heat to medium-low and simmer soup for 5 to 7 minutes, until the sweet potatoes are fork tender.
.
turn off the heat, remove the lid and add the chopped cauliflower florets to the pot. let the soup sit for 10 minutes.
.
transfer soup to a high-speed blender and blend until smooth.
.
return the soup to the pot. season with salt to taste. add 1/8 teaspoon of cayenne pepper for a hint of spice.
