Quick and easy scallops with zucchini noodles: ๐Ÿฝ
๐Ÿ”นHeat 1 Tbsp butter or ghee in pan
๐Ÿ”นSeason 1/2 lb scallops with salt and garlic (I use @flavorgod lemon garlic)
๐Ÿ”นAdd scallops to pan and cook 3-4 minutes on each side until cooked through. ๐Ÿ”นTake scallops out of pan
๐Ÿ”นAdd a little more butter or ghee to browned bits in pan and add about 1 lb of zucchini noodles (I used the box from @wholefoods)
๐Ÿ”นSeason with salt and pepper and the juice of 1/2 lemon ๐Ÿ‹ ๐Ÿ”นSautee zucchini noodles 2-3 minutes then add scallops back to pan to heat all together. ๐Ÿ”นEnjoy! (Serves two)

Waking up with my daily dose of @firecidershirecity Fire Cider. ๐Ÿ™Œ๐ŸŽ๐Ÿ”ฅIt's a blend of apple cider vinegar, lemon, orange, and anti inflammatory spices like ginger and turmeric. Habanero pepper gives it a kick and this unsweetened version is no joke. ๐Ÿ˜๐ŸŒถ๐Ÿ”ฅI mix a tablespoon with a small cup of warm water and drink first thing in the morning - especially if I'm not feeling 100%. I barely touched my snacks thanks to the amazing lunch that @eastendbiketours provided today! It was a full Mexican food spread but they were SO accommodating and offered plain protein options in addition to the burritos they were serving. They even cut up the grain free baguette I brought for the olive oil tasting. The salad had fresh strawberries and apples with a homemade strawberry dressing. All #glutenfree #soyfree and #paleo. It was an amazing five hours riding through the Long Island vineyards, beaches and local farm stands. If you're in the area I highly recommend taking a tour with them this summer! ๐Ÿšด๐Ÿปโ€โ™€๏ธ๐Ÿท๐ŸŒŠโ˜€๏ธ๐Ÿฅ—๐Ÿฅ–

I am living proof that carrot tops are in fact EDIBLE! ๐Ÿฅ•๐Ÿ’ƒI posted this carrot pesto on my story during my @21daysugardetox IG takeover and I heard from followers who didn't know they were safe to eat. Of course I second guessed myself immediately (even though @tedtheguineapig3 has been enjoying them for some time now ๐Ÿน) and went straight to google, ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿ’ปand while "are carrot tops poisonous" seems to be a popular search, ๐Ÿค“they are thankfully perfectly safe. In fact, they are actually pretty healthy too. ๐Ÿ™Œ .

Carrot Top Pesto:
๐Ÿ”น1.5 cups chopped carrot tops (from 1 big bunch of carrots) ๐Ÿ”น 2-3 cloves garlic
๐Ÿ”น1/4 cup pine nuts ๐Ÿ”นsqueeze of 1/2 lemon ๐Ÿ”น1/2 cup olive oil
๐Ÿ”น1/2 tsp sea salt
Combine in food processor and blend. .

In case we haven't "met", here's a little about my own personal journey with the #21daysugardetox: For most of my life I struggled with my weight, acne, back pain and migraines. In 2008 I started having new symptoms including fatigue, and numbness and tingling in my hands and feet. This eventually led to my diagnosis of Multiple Sclerosis in 2010. I finally decided to start taking control of my own health, and after reading about others with autoimmune diseases such as MS who found success by making changes to their diet and lifestyle, I decided I would try following a #paleo diet. The 21-day sugar detox seemed like the perfect jumpstart in that direction. .
My first #21DSD was in 2013, and I quickly learned that by eliminating sugar and processed foods, my headaches and fatigue dramatically reduced, and my sleep improved as well. I learned new ways to manage stress, started doing yoga, and shifted my focus more on self-care. Today I maintain a 90% Paleo lifestyle and have never felt better. .
As a #21dsdcoach and integrative nutrition health coach, I help my clients to achieve their goals by making small steps to changing their diet and lifestyle, leading to big improvements in their overall health. .
