Up close and personal with those sprouts... 😍 Onions sautéed in bacon fat, mixed with mini brussel sprouts and butternut squash, topped with sea salt and rosemary and roasted at 400 about 30 minutes. Cooked bacon 🥓 goes on top when done. I added some apple juice sweetened cranberries for the last few minutes of roasting to bring in the sweet new year! My Mom's famous carrot kugel recipe, #paleofied: 🥕❤️🥕 4 cups grated carrots
2 cups @bobsredmill Paleo Baking Flour
1 tsp baking soda
1 tsp baking powder
1/2 cup organic canola (I KNOW this isn't ideal, but I don't personally didn't like how it came out with coconut or grapeseed oil. The original calls for corn oil so this is an improvement but feel free to use your oil of choice!)
1/2 cup unsweetened applesauce
1 1/3 cup organic coconut palm sugar (or a little less is good too)
4 eggs
2 TBSP cold water
1 TBSP lemon juice .
First Mix oil and sugar and eggs in a large bowl. Add dry ingredients and mix. Add carrots last. Pour into 9x11 baking pan and cook at 350 for about 45 minutes. L'shana Tova to all those celebrating a sweet New Year! .

I never really made fried fish 🐟 before, but it came out great, even the next day. Grey sole dipped in egg and @bobsredmill #paleoflour, pan fried in organic palm oil, served with a little leftover grass fed beef, roasted shishito peppers 🌶 and lots and lots of local organic broccoli rabe from @ironwoodfarmny. In the summer I slack a bit on #bonebroth making, but it's getting cooler and I'm back in the game 🍲:

🔹1.5-2 lbs beef marrow bones (mine are grass fed local bones from @hemlockhillfarmny). 🔹1 onion
🔹5 cloves garlic
🔹6 peppercorns 🔹2 TBSP Apple cider vinegar 🔹two bay leaves 🔹carrots (optional- I don't always use them but did today)
🔹Add water to fill line on slow cooker, cover and cook on low 16-24 hours or more. 🔹Strain and serve or store in refrigerator or freezer. .

Digging into this #glutenfree #dairyfree #frittata that might be a new favorite. 😋 I used onions and bok choy but you could use whatever greens and veggies you have on hand. .

Before you begin, cook some bacon and cut up your veggies. .
🔹Heat 1 tbsp ghee in skillet
.
🔹Add 1 large onion (chopped) and sautée 2-3 minutes until they are getting translucent. .
🔹Add 3 bunches of bok choy chopped and sautée until wilted
.
🔹Whisk 12 eggs in a separate bowl with some salt and pour over the veggies. .
🔹Next add on top:
🔸3 strips of cooked bacon 🥓 (cut into squares)- I used @applegate #organic turkey bacon for this one.
🔸About 10 cherry tomatoes (cut in half)
🔸Season with salt, pepper or dukes flakes to taste. .
🔹Cook in skillet on cooktop for 5-8 minutes or until eggs are just firming up .
🔹Transfer into the oven at 350 for another 8-10 minutes until the eggs are all cooked through. You can cut into slices and store in the fridge and you've got breakfast set for the week!
