Getting a yummy brunch in full of carbohydrates for sustained energy throughout the day 😆
These are my new favorite pancakes using Ener-g egg replacer 🙌🏼
👇🏼Recipe👇🏼
🔸Mix together dry ingredients: 1/2c Brown Rice Flour + 1t Baking Powder
🔸Mix well in a small bowl 1 1/2t Ener-G Egg Substitute + 2T Warm Water
🔸Mix into Egg Replacement bowl 1/2c Unsweetened Soy Milk + 1 1/2T Maple Syrup + 1T Mashed Banana
🔸Mix wet and dry ingredients together
🔸Cook each pancake on a nonstick pan on medium and then lower to medium low until lightly browned on one side, then flip.
🔸When finished cooking, top with Shredded Coconut and Maple Syrup

👇🏼Recipe👇🏼

✨This Vegan Mashed Potato recipe is delicious and super easy to make too! 🙌🏼
👇🏼Recipe👇🏼
🔸Peel Potatoes first if you desire, I like the potato skin so I leave them on 😋
🔸Cube potatoes into fourths
🔸Put Potatoes in a large pot and fill with enough Water to cover all Potatoes
🔸Cook on high heat atop stove until Water boils
🔸Bring heat down to simmer and cook until a fork can easily be inserted into Potatoes
🔸Drain pot of all water and put Potatoes in a large bowl
🔸Mash Potatoes with a Potato Masher until they are as smooth or lumpy as you desire
🔸Add creamy Unsweetened Plant Milk (Soy or Cashew) a little at a time, stirring until you've reached the thickness you like
🔸Add No-Salt Salt (Potassium Chloride) + Black Pepper to taste
🔸Optional and seriously amazing topping: Vegan Mozzarella Cheese, I used Daiya👌🏼

🔸Prepare Sushi Rice
•Slice and set aside Sushi fillings•
🔸Cucumber
🔸Cilantro
🔸Fresh Basil
🔸Cooked Asparagus thinly sliced
🔸Red Bell Pepper thinly sliced
🔸Extra Firm Tofu
🔸Avocado 🙌🏼
🔸Shaved Carrots
✨Choose about 5 fillings
•Place Nori on Sushi Mat, lining up folds on Nori so they are perpendicular with bindings on mat.
•Place cooked Sushi Rice along center of Nori perpendicular to the mat's bindings.
•Top Sushi Rice with fillings
•Top again with Sushi Rice
•Roll mat carefully and firmly to close up Sushi Roll
🔸Unroll mat and using a very sharp knife, slice the single roll into bite sized pieces.
🔸Top with Cilantro and Sriracha.
🔸Dip in Wasabi/ GF Tamari or Soy Sauce Alternative ✨Enjoy!😋

🍃 Breakfast Vegan Style 🍃
✨Starting the day with a yummy Nectarine-Banana Shake and French Toast 😋
✨Opposite is a PB-Banana Shake and Tofu Scramble 👌🏼
👇🏼Recipe👇🏼
•Nectarine-Banana Shake•
🔸Blend 1 Nectarine with 1/2 a Banana, a few drops Stevia Extract, and Unsweetened Soymilk to achieve desired thickness.
•French Toast•
🔸Blend together 1/2 Banana, Splash Cashew Milk, Dash Cinnamon, Dash Pumpkin Pie Spice, and 1T Date Sugar
🔸Pour Mixture into a shallow bowl
🔸Coat both sides of BFree White Sandwich Loaf Bread Slices in mixture
🔸Cook on Skillet on Medium Low and flip when one side is golden brown
🔸Top with Coconut Flakes and Maple Syrup
•PB-Banana Shake•
🔸Blend 1 Banana with PB to taste (about 2T), a few drops Stevia Extract, and Unsweetened Soymilk to achieve desired thickness.
•Tofu Scramble•
🔸Cut tofu block into 1in slices (as you would for bread)
🔸Press the slices between 2 cutting boards, draining sideways in sink, while still pressed.
🔸Cook bite sized crumbles on stovetop in a nonstick skillet on medium and flip when one side is browned.
🔸Add your favorite veggies and legumes.
🔸Season with a dash 21 Seasoning Salute
🔸Top with Salsa, Avo, and Cilantro

🔸2T Peanut Butter or 4T PB2 aka Peanut Flour
🔸Molasses to Taste ~3-4T
🔸10 Drops Stevia Extract 🔸Cashew Milk to achieve desired texture (add a splash then more after blending if desired) ~1/4c-1/3c total 🔸a Handful Ice
