Got a small vegan meal prep done today for the fam👨‍👩‍👧 Kale salad messaged in olive oil, lemon, garlic powder, onion powder, nutritional yeast, salt and pepper, topped with cherry tomatoes, shredded carrots, one with tempeh and one with chickpea veggie burger , radish, avocado, pumpkin seeds and brown rice.
Tofu baked with olive oil, garlic powder, turmeric, everything but the bagel spice.

Tempeh baked with liquid aminos, maple syrup, lemon, avocado oil, garlic powder, and chili flakes.

Baked sweet potatoes

Baked broccoli and cauliflower mixed with avocado oil, salt and pepper.

Salad dressing- olive oil, lemon, cumin, salt, pepper, dried mint leaves blended.

Chai pudding mixed with almond milk, maple syrup, vanilla extract and berries.
Mixed nuts in containers for snacking on
Homemade cashew milk-just 1 cup of cashews soaked for up to 8 hours then blended with 4 cups of water pour it through a milk bag and lasts in the fridge for up to 3 days!! Wishing you all a beautiful new week😍 let’s give this new week lots of energy and positive vibes 🙌🏻

Hope everyone’s fast is going well❤️ if you love super moist muffins you are going to love these vegan, gluten free, delicious banana muffins 😍 they have been my go to lately!! 2 ripe bananas smashed

2 flax eggs ( 2 tablespoons ground flax seeds with 6 tbsp water and let it sit for 5 min before using)
3 tbsp maple syrup
1 tsp vanilla

1 tsp baking powder

1 cup almond flour

1/2 cup oat flour

Mix everything well and bake on 350 for 20-30min!

Here’s a vegan recipe that you don’t wanna miss out on❤️ quinoa black bean burgers😍😍 here’s the recipe since you all voted you wanted it❤️ -1 cup quinoa cooked -1 can of black beans -1 tablespoon avocado oil or 1/4 cup vegetable broth for sauteeing -1 small onion, finely chopped -2 cloves garlic, minced -2 green onions, chopped -1/4 cup yellow pepper finely chopped -1/2 teaspoon ground cumin -1/2 teaspoon smoked paprika -1/2 teaspoon dried oregano -1/2 teaspoon salt -1/4 teaspoon Cayenne pepper -1/3 cup gluten free oats

Preheat oven to 375
Start by heating the oil or broth then add in the onions, garlic and yellow pepper and let it sauté for a few min then add in the black beans and spices and cook it for a few min.
Transfer bean mixture to a big bowl, add in cooked quinoa, mash the mixture with either masher or fork. Stir in the oats and let it sit for 5 min.
Form into patties and place on baking sheet ( I used a little bit of coconut oil on my baking sheet to give the burgers a crispy outside)
Bake for 30 minutes

Omg these popsicles are AMAZING!!!!! If you like matcha your going to love these pops!!! These are perfect for the hot afternoons to help cool you off and refresh instead of having a warm matcha latte!!! 1 cup canned coconut milk
1/4 cup maple syrup
2 tbsp matcha
Blend all the ingredients then add them into popsicle molds, freeze for a few hours once they’re ready you can add on melted dark chocolate and enjoy ❤️❤️

Who else puts fries in their salads 🙋🏻‍♀️ mine are Japanese sweet potato fries baked and is so good over kale mixed with other veggies 😋

Kale messaged with juice of 1 lemon topped with cherry tomatoes, shredded corn, green olives, radish, baked onions, baked potato, avocado, mushroom “burger” which I marinated in my homemade bbq sauce then grilled 😍😍
Homemade bbq sauce:

16 oz can of tomato sauce
3 tbsp maple syrup
2 tbsp apple cider vinager

3 tbsp coconut aminos

1 tsp sweet paprika

1 tsp dried oregano
Mix all the ingredients and let it sit for 1 hour before using so all the flavors can combine 😋

Starting this Monday off in the most positive way 😏 3 ingredient banana pancakes!! So quick and easy to make it’s one of my favorites!! 2 ripe bananas

3 cups gluten free oats
2 cups almond milk

Blend it all together till batter is smooth. Heat a non stick pan on medium and pour some of the batter and cook until you start to see bubbles then flip and cook until golden🥞 I topped mine with microwaved frozen berries, banana and some maple syrup😋

Vegan, gluten free falafel balls!! They are so easy to make and perfect for the 9 days!!! 1 can of chickpeas (drained and rinsed)
Handful parsley
Handful coriander
1 garlic clove

1/4 tsp chili flakes

2 tsp cumin

1 tsp tahini
2 tbsp almond flour

1 tbsp gluten free flour

Preheat oven to 400 degrees. Blend all the ingredients till batter is smooth, shape into balls,place on parchment paper press lightly on each falafel down so it gets flatten (like mini burgers) then bake for 20-25 min!! I paired these delicious falafel balls with quinoa, kalamata olives, spicy chummus, avocado topped with black sesame seeds, salad filled with cherry tomatoes, cucumbers and parsley all sprinkled with lots of lemon😍😍 Wishing everyone an easy beautiful week🤗❤️❤️❤️

Restocking my freezer with guiltless treats!! Love having desserts that can be frozen so they last a long time!! These chocolate balls have been a staple in our home for a long time!! 1 cup of walnuts

1 cup of dates

2 tbsp cocoa powder

Blend the walnuts then add in the dates and cocoa powder, shape into balls and either store in the fridge or freezer 🤗

Holding the yummiest seasonal fresh fruit tray, from our local organic farms 😋!! I am so excited to start another health coaching course in 2 weeks, learning more about the affects of hormones in our bodies!
Even though I am already a certified health coach, I always challenge my self to learn more about the endless affects our environment has on our body.
it’s so important to keep learning and educating yourself everyday, especially since information always changes and you can never learn enough!!
