I know this isn’t the prettiest or most extravagant meal, but I wanted to share so I could talk about the importance of incorporating nutrients into your meals. When I first started experimenting with healthy eating, I could never imagine eating green veggies for breakfast... and now I can’t imagine a breakfast without them. Different greens provide different vitamins and nutrients, and I admit I’m not an expert on all of them (I’m learning), but still I try to incorporate them at almost every meal. It’s become a mental checklist of mine, which I’ll talk more about in the future. Having them for breakfast, along with protein & healthy fat (& sometimes a little sugar... I’m a big sugar person🙈), really leaves me feeling well & fueled for the day ahead. I encourage you to incorporate more greens & veggies in your diet! I promise it’s so worth it🙌🏼

Staying fueled is essential to staying productive. For lunch today I made a bowl with leftover honey balsamic crispy brussel sprouts from last night, topped with canned salmon, avocado, lemon, everything bagel seasoning & a bit of #traderjoes almond butter turmeric dressing. BISCUITS!!!! One of my favorite foods... I’ve always been a big ‘breadie,’ and that was one of my biggest fears giving up wheat and eventually all grains. It felt like giving up a part of myself! Luckily, I haven’t had to make any sacrifices. Finding accessible, extremely satisfying paleo alternatives to processed, unhealthy foods is actually so easy, and even more fulfilling because you know you’re providing your body with wholesome, sustainable ingredients instead of empty calories that weigh you down physically and emotionally. There is absolutely zero guilt when treating myself to paleo treats like these, and I haven’t sacrificed any flavor or experience — in fact I actually prefer the wholesome, fresh taste! This biscuit recipe is pretty easy, doesn’t require many ingredients, except make sure you have parchment paper, a biscuit cutter (although I used the top of a glass) and a rolling pin. The only ingredients are cassava flour, palm shortening, baking powder, sea salt, coconut milk, and lemon juice. They are of course #paleo, but they’re also #vegan & #AIP. I top them with honey or St Dalfour fruit-juice sweetened jam. You can also find easy paleo margarine recipes online - I’ll share some soon. #Cereal used to be one of my favorite foods... luckily for this #granola, it still can be! It’s completely grain-free, and deliciously crunchy. It’s also #vegan! I have it in the morning with some @vitacoco milk, and I don’t miss sugary, processed cereal (or dairy milk) at all! Available at Trader Joe’s.
