I made a batch of the @deliciouslyella Baked Butter Bean & Cauliflower Falafels and roasted up a load of sesame carrots πŸ˜‹ served with a big blob of hummus. Happy days xox

Spinach, sweet potato & vegan feta rolls - I made these yesterday and they are all gone! I bought some of the new @mylifebio feta for these and it made them so cheesy 😊 Need to make more ASAP xox

Peanut Butter Cups topped with Coconut. So good I’ve been eating them frozen!! 🍫 I used Lindt 70% Smooth Blend and πŸ₯œ Smooth @byronbaypeanutbutter xox

Crispy Sesame Cauliflower Bites ❀️ They looked so beautiful just like this straight out of the oven. To make - I mixed together cornflour, hot water, sesame oil & maple syrup to lightly coat the cauliflower then cooked in the oven (200 degree fan) till crispy xox

Crazy busy week at work so I’m doing a #tbt to 2015 when I made these Roasted Sriracha Cauliflower Bites with Peanut Dipping Sauce - recipe from the first @thugkitchen cookbook. I wish these were waiting for me at home ready to dive in too!! 🧑 Love Louise xox

Pesto Pasta is a favourite meal of mine and this version has extra veg making it even greener and delicious! 😊 πŸ”ΊServes 2
* 150g of pasta (I used fettuccine)
* 1/2 avocado
* 60g bag of spinach
* 1 tablespoon lemon juice
* 1 tablespoon e.v olive oil. * 1+1/2 tablespoon lightly dried basil
* cashew parmesan
πŸ”ΊCook your pasta. Blend all the other ingredients until fairly smooth. Mix pasta and sauce together. Cover in cashew parmesan and tuck in βœ… I used @GourmetGardenAustralia’s Lightly Dried Basil and it packs a serious flavour punch 🀜 with the added bonus of leftovers staying fresh in the fridge for up to 4 weeks!

My working week is done βœ… I am now on the train home thinking about what I can bake this weekend πŸ™ˆ This is a picture of my chocolate brownie cake I made last weekend using the @minimalistbaker Simple Vegan Brownie recipe served with vanilla coyo & strawberries πŸ˜‹
