There's a few birthdays down on the farm over the next few weeks, if you're looking for a delicious birthday cake recipe look no further than Mary Berry's Lemon & Yoghurt cake!
300g caster sugar
225g natural yoghurt
Zest of one lemon
175g self-raising flour
100g sifted icing sugar
1 1/2 tbsp of lemon juice
Preheat the oven to 180degrees, grease and lime cake tin.
Beat together sugar, butter and egg yolk before adding yoghurt and lemon zest. Then gently fold in flour.
Whisk the egg whites until they have soft peaks, then fold them into the mixture.
Bake for one hour and allow to cool.
To make the icing, mix icing sugar and lemon juice before pouring over the cooled cake and allow to set.
Add some birthday candles and sing! 🎂
