It's #NationalPistachioDay! Aren't all those "food holidays" fun? I see them as delicious excuses to get inspired and discover new recipes.

Pistachios are my favorite nuts to use in baking. They're colorful, have a rich creamy taste, and they're versatile too. There are a lot of dessert recipes that feature pistachios on my blog, but my favorite has got to be the Pistachio Gelato I created to get over my Sicily blues. After tasting pistachio gelato in Sicily, there's no returning to artificially flavored varieties! That's why my gelato is made with an homemade pistachio paste: it takes a bit of time to make--I see peeling the nuts as a relaxing activity--but it makes all the difference in the world.

Does this sound like a winning tagline to you? Well, these drop-dead gorgeous blood oranges sure brightened up *my* day. I had a very ambitious week of recipe testing slated, but two days ago, the little one went down with a fever and his condition has yet to improve. So instead of cooking and baking, I've been cuddling and cradling.

During naptime today, I was looking for a kitchen task that would be quiet and satisfying to do. Pressing citrus fruits has always had a therapeutic effect on me, so it was the perfect thing to distract me from parental worries. I mean, look at that nature-created, amazingly deep shade of red! โค

This lovingly pressed blood orange juice will be turned into a fabulous ruby-colored granita. What is your favorite way to enjoy blood oranges? If you like them, so pick up a bag at the market *now*--the season will soon be over!

Can't you just smell the delicious aromas coming out of this big pot of homemade tomato sauce? I don't know about you, but tomato sauce serves as a base to many of my family's weeknight meals. Here are just a few ways how I like to use it:

๐Ÿ”ธAs pasta sauceโ€”obviously! I simple toss in leftover meat or veggies to turn it into a complete meal;
๐Ÿ”ธAs a base for meatballs or chicken parmigiana;
๐Ÿ”ธSlathered onto my favorite pizza dough, over pita or tortillas to make super quick mini-pizzas, or onto crostini to create last-minute cocktail bites;
๐Ÿ”ธAs a poaching sauce to make shakshuka;
๐Ÿ”ธAs a dressing for garlicky shrimp;
๐Ÿ”ธAs a dipping sauce for anything that requires dipping.

โ€œIs it dinnertime yet?โ€ My son is a huge motivating factor for streamlining our weeknight meals. I try to plan for quick options, in the fridge or freezer, so we donโ€™t have to scramble come 5 p.m. every day. Just a few days ago, I was pulling another of those life-saving jars of homemade tomato sauce from the freezer with the plan, that night, of serving it with meatballs. The gratitude I felt when I stirred the bright red sauce and smelled its aromatic perfume made me realize I should share my tomato sauce recipe, even if itโ€™s just to archive it for posterity.

My oven is up and running again! ๐ŸŽ‰ After a full month of downtime, you better believe I was excited to get baking again! The first thing I made was a batch of my son's favorite muffins. I must have baked a thousand of those over the past three years, but it's the first time my son helped me make them from start to finish. We had a lot of fun: he was more patient than I expected he would be, and he was so proud to see the results of his work! Lately, he's been offering to help in the kitchen more frequently, so I just knew baking his favorite treat together would be a fun project ๐Ÿ™Œ๐Ÿผ

Here's my recipe for our easy Banana, Oats, and Blueberry muffins. They take just a few minutes to whip up--a little longer if a tiny sous-chef is helping you ๐Ÿ˜

Makes 12 muffins
.
1 cup whole-wheat flour
1/2 cup regular oats
1/2 cup cane or maple sugar
2 tbsp hemp or chia seeds (optional--increases protein content)
2 tsp baking powder
.
3 eggs
3/4 cup milk
2 tbsp oil (I use walnut oil, but you can use olive oil, canola oil, or even applesauce)
1 overripe banana
.
1/2 cup blueberries (fresh or frozen)
1/4 cup chopped dried cranberries
Granola cereal of your choice (optional--but adds a fun crunchy topping!)
.
Preheat oven to 350F. Mix dry ingredients together. In another bowl, beat the eggs, milk, and oil together. Mash the banana and add to the wet ingredients. Pour the banana mixture into the dry ingredients, and use a fork just to combine. Fold in the blueberries and cranberries. Divide between greased or lined muffins cups. Generously sprinkle with granola cereal. Bake for 18 minutes. Enjoy!

๐Ÿ’›Exotic citrus fruit haul! ๐Ÿ’›

Thanks to a tip from @christellerocks, I found the most amazing source for exotic citrus fruits in Montreal. The place had e-v-e-r-y-t-h-i-n-g, even fresh yuzu, which I never dreamed I would lay my hands on! Though sold at $10 a pop, it was an unexpected find. I even found citrus varieties I'd never heard of (pink lemon! sweet limes!) Believe me, I'll have a lot of fun with these babies in the upcoming week...
.
For the curious among you, here's a citrus fruit primer (starting from 3 o'clock, right, going counter-clockwise):

My quick trip to Montreal was motivated by my upcoming cookbook project! ๐Ÿ“š I was looking for specific ingredients that can be hard--or impossible--to find in Quebec City, and I was also on the hunt for fresh new dinnerware and accessories. Prop shopping proved to be as much fun as I expected! Though it's way too easy to get carried away and go over budget... ๐Ÿ™ˆ
