• 1/4 cup coconut oil ⠀⠀⠀⠀⠀⠀⠀⠀
• 4/5 cup coconut milk ⠀⠀⠀⠀⠀⠀⠀
• Juice of 1 lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/2 cup maple syrup ⠀⠀⠀⠀⠀⠀⠀
• 1 1/4 cup ground almonds ⠀⠀⠀⠀
• 1 1/4 cup gluten-free self raising flour ⠀⠀⠀⠀
• 100 g dark chocolate or nuts ⠀⠀⠀⠀⠀⠀
• 3/4 cup fresh raspberries ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
🦄FUN ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀
• Preheat oven to 180 degrees ⠀
• Melt the coconut oil ⠀⠀⠀⠀⠀
• Add the milk, lemon juice & maple syrup ⠀⠀⠀⠀⠀
• Stir in the ground almonds, sift in the flour & add the chocolate in chunks or nuts & mix well ⠀⠀⠀⠀⠀⠀
• Transfer blondie batter to a greased baking tin ⠀
• Press the raspberries into the batter in a pretty pattern to pimp - if you mix them in the juice will 'bleed' out of them and the blondies won't look as pretty! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀
• Bake for 20 mins until golden ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀

Having an utterly rubbish time going in & out of hospital for tests at the mo with still no confirmed diagnosis to add to the frustration, fun times. Taking each day as it comes, I’m doing my best to keep smiling, focus on the positives & make the most of the situation ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Time is precious & every minute counts so I’m trying to use the time I have productively to stimulate & retrain my mind (which has turned to mush after the last year of illness) I’m listening to audiobooks, podcasts & TedTalks (any recommendations mahoosively welcome), doing crosswords & sudoko (true story, it’s like I’m prepping for countdown... watch this space), brainstorming Bootycamps, researching recipes, reading research, meditating, stretching, setting goals & learning Spanish, hola (nailed it) 👊🏻 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
By doing a little bit each day you can get a lot accomplished! 👌🏻 We’re all a work in progress. When you focus on doing a little bit consistently that’s when transformation happens. I’m rocking the roids to suppress my immune system & help reduce inflammation in my body. While research shows it can be effective in controlling symptoms, it can also cause a variety of side effects itself, including weight gain, increased appetite, excessive sweating, mood swings, hair loss on your head & ofcourse the beard. Greeeeeeat! They weren’t lying…⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Bloated - I’m soooooo bloated. It’s horrible! Sometimes my stomach is the size of a watermelon. Like you would defo give me a seat on the tube! I eat right, sleep for 10-12 hours a night, look after my gut health, hydrate and exercise when I’m not in agonising pain – but my weight continues to increase and I feel constantly puffed up due to the change in hormones! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
It’s hard feeling like I don’t have any control over my body and easy to get down about it but then I remind myself that health comes first! If these roids help to repair my liver in the long run then that is my main priority. This whole experience has highlighted just how important health is and enhanced my passion and love for my job as a personal trainer. Health can be undervalued until sickness is experienced.
