GRILLED bang bang shrimp bowls😍your new favorite 30 minute dinner option! Creamy, spicy, sweet, bang bang shrimp sauce, crunchy slaw, and flavorful fried rice make weeknights a little more fun!
Anyone else able to finish off and appetizer order of fried bang bang shrimp themselves? 🤷🏾‍♀️ well this is the much cleaner and healthier alternative!

Currently on repeat: perfectly roasted chicken, lemony + garlicky roasted potatoes, and a big ol’ salad! Roasting a whole chicken will make you feel like a kitchen ROCKSTAR 😎

These Mexican Stuffed Peppers were life savers earlier this week. I made them as part of my meal prep and heated them up for dinner Monday night.
The peppers are roasted for a few minutes before they are filled to make sure they get nice and tender while the filling is made with taco-seasoned ground beef, cauliflower rice, and fire roasted tomatoes. You can top these with cheese if you please (😂) or pico de Gallo and avocado if keeping things #whole30compliant.

This Strawberry Chia Seed Pudding is one of my favorite “light” treats to have in the summer. It great spooned over oatmeal (warm or cold), plain with my lemon granola, or layered into berry parfaits.
3/4 C Strawberry Yogurt of your choice
1 C coconut milk
1/3 C Chia seeds
1-2 tbsp maple syrup (depends on how sweet you like it)
Add everything to a jar or bowl. Stir to combine and refrigerate for 10+ hours. That’s eat!
This is about as close to a strawberry milkshake as you’re going to get without the bloat!

Easy summer nights = dinner on the patio and less dishes! Spatchcocked chicken, whipped sweet potatoes, and a little sautéed baby broccoli (thanks for the tips @nocrumbsleft ). I get asked about easy side dishes and this is definitely going to be on repeat in my house!
8-10 stalks of baby broccoli, roughly chopped
4 cloves of garlic, sliced or whole
1 tbsp ghee
1 tbsp olive oil
Salt+pepper, to taste.
Add the ghee, oil and garlic to a sauté pan. Add the chopped baby broccoli. Season with salt and pepper. Stir frequently until the pieces begins to soften. Cover with a lid for 5 minutes to make sure the stalks get tender enough. Serve hot!

Easy Italian Beef Sandwiches 🤤this is a recipe that has been on my blog from years but today, I updated it with #instantpot instructions!
Guys, this roast went from freezer, to instant pot to plate, in less than 3 hours! Yes. It started out frozen and turned out super tender and delicious. Can you say game changer 🙌🏾

Dinner last night: #traegernation salmon over a bed of greens with grilled corn, avocado, crispy ranch chickpeas and a little homemade ranch! I took the last bit of #whole30 roasted garlic ranch (recipe linked) and stirred in 1 tbsp of basil pesto and a splash of coconut milk. I then drizzled that over EVERYTHNGGGG.
Nothing fancy but took 15 minutes to throw together!

Super Simple Summer Salmon... an easy weeknight dinner- my @headcountrybbq smoked salmon on my beloved @traegergrills. Seriously takes less than 30 minutes. Tonight, I’m tossing the salmon on top of some greens for a tasty little salad but it’s also good with lemony green beans and crispy potatoes.

One of my most asked questions is “do your kids eat healthy? If so, how do you do it?!” I so wish I had the perfect answer for you. They eat healthyISH. I try to be mindful of sugar, always encourage 3 bites of everything on their plate, and try to make it fun by letting Joy wash veggies and J use the salad spinner but it’s NEVER easy. Dips help; Joy loves hummus and ranch whereas J is much less picky.
We try to save fast food for special dates with grandparents but sometime a little chic fil a keeps us sane!
All I can say is KEEP TRYING. I stopped crying over barely touched plates years ago so don’t stress! And YES- I have chicken nuggets and corn dogs in my freezer but I always slide a veggie on the plate with them 😉
