From a few days ago..... soy and garlic chicken, grilled aubergine, roast potatoes, 🥒 and 🍅 😋😋 — Aubergine cut into half cm slices, lengthways. Spiced with paprika and chilli salt before chucking it over a griddle pan.
A berry nice bowl of pudding, pre-workout 😅 Back at it with those dessert meals when the cravings kick in. I’m getting pretty good at this, I gotta say. 0% greek yoghurt, @marksandspencer skinny triple choc sundae, berries. ☀️ Summer bowl goodness. Perfectly aligned macros. Indulgent. Total satisfaction. Yes.
Black bean and sweetcorn quesadillas 🤤. Black beans cooked in chopped tinned tomatoes, paprika, cumin, chilli, garlic powder for about 25 mins on a low heat. Stir sweetcorn in. Slice/grate @eatlean cheese (or whatever cheese), grab your tortillas, line with cheese, spoon in the filling, add a little cheese on top, fold your tortilla over and toast/lightly fry. Muy bien 😻

Since this was requested by a few: 1kg chicken mince with a couple of tbsp's of chickpea flour (omit for whole30), minced onion, minced fresh green chilli, fresh coriander-finely chopped, whole cumin seeds, salt and pepper, and about a tbsp of a dry mixed spice I found in the cupboard- I'll have to source the name! But feel free to add whatever spices you like 🌶
