From a few days ago..... soy and garlic chicken, grilled aubergine, roast potatoes, πŸ₯’ and πŸ… πŸ˜‹πŸ˜‹ β€” Aubergine cut into half cm slices, lengthways. Spiced with paprika and chilli salt before chucking it over a griddle pan.

Black bean and sweetcorn quesadillas 🀀. Black beans cooked in chopped tinned tomatoes, paprika, cumin, chilli, garlic powder for about 25 mins on a low heat. Stir sweetcorn in. Slice/grate @eatlean cheese (or whatever cheese), grab your tortillas, line with cheese, spoon in the filling, add a little cheese on top, fold your tortilla over and toast/lightly fry.

Hey πŸ‘‹πŸ½. It’s been a while πŸ˜† Just finished lunch... thinking about my next meal πŸ™Š and found a pic of these little improv beauties. Stuck for time? GF crusty sesame burger buns from M&S cut in half and made into little pizza buns. A simple tomato sauce made using chopped tinned tomatoes, dried herbs, chilli, and s+p. I let it cook down until it is almost reduced to a paste. Spread across your buns. Top with Cajun spiced chicken (I used a store bought seasoning) veggies, and freshly grated cheese and whack em under the grill.

Since this was requested by a few: 1kg chicken mince with a couple of tbsp's of chickpea flour (omit for whole30), minced onion, minced fresh green chilli, fresh coriander-finely chopped, whole cumin seeds, salt and pepper, and about a tbsp of a dry mixed spice I found in the cupboard- I'll have to source the name! But feel free to add whatever spices you like 🌢
