Autumn means comfort food, and comfort food means slow cooking BUT slow cooking doesn't necessarily mean meat. This dish is by far the best thing to ever happen to aubergines! The trick is to treat them like a good cut of meat - take the time to massage the flesh in the marinade then cook low and slow for incredibly tender 'meat' that soaks up those wonderful punchy garlic, chilli and ginger flavours (full recipe through link in bio).⠀

The key to delicious egg dishes is great quality eggs 🥚🍳! So for #WorldEggDay, here are some facts to help you buy the best eggs and make the right choice for you and for the welfare of the chickens that laid them:⠀

FREE RANGE: free range hens do have unlimited daytime access and at least 4 square meters of outside space per bird BUT there is no limit on flock size and both beak trimming and use of antibiotics are commonly practiced⠀

ORGANIC: unlike free range, organic farms are certified by the @soilassociation who ensure access to pasture isn't restricted and organic bird feed is always GM-free⠀

CAGED: in 2010, cramped battery cages were prohibited in EU. But modified cages, also called ‘enriched’, ‘furnished’ or ‘colony’ cages, remain legal, and animal welfare experts agree that these new cages are not a great deal better.⠀

CAGE-FREE: a cage-free egg is one that has been produced in accordance with the welfare methods set out for free-range eggs or organic eggs. ⠀
