Started the morning with a nice long run along the eastern promenade. Then first stop was at @lbkitchenportlandme for some lattes, aΓ§aΓ­ bowls, and avocado toasts πŸ₯‘ so yummy + cute vibe! Would highly recommend!

Made it to Portland! So excited to explore this beautiful area! Anyway, yesterday’s rainbow 🌈 bowl was serious M A G I C πŸ™ŒπŸΌ loaded it up with all the goods and I’m so excited to share it with ya!

Base was dino kale + @organicgirl protein greens + butter lettuce // topped it off with my prepped adobo sweet potatoes + pico de gallo @bienasnacks chips (bean based πŸ‘…) + avocado + @kitehillfoods almond-based β€œricotta” + @vitalfarms soft boiled egg + pickled red onion + hemp seeds + @go_raw sprouted pumpkin seeds 😍

since so many of you have been asking about this πŸ‘†πŸΌπŸ€€ CARROT + PUMPKIN SPICE oats recipe coming in hawt for ya! πŸ‚πŸ

Guys - first off it is SO easy but the key is HOMEMADE pumpkin spice cashew milk! Soak 1 cup raw cashews for 3 hours. Rinse & add to blender (I have a vitamix & it works well so need to strain). Add 5 cups filtered water (the less water, the creamier & thicker your milk will be). Add in @primalpalate pumpkin pie spice (I give a hefty shake!) & a few drops of vanilla stevia or any sweetener of your choice. BLEND for 2 mins & chill asap!

For the oats: over a stovetop add 1/2 cup quick oats (I prefer quick over rolled) + 1 tbsp chia seeds (fiber & thickens it up even more 😍) + 1 cup of your pumpkin cashew milk + ~ 1/4 cup shredded carrot (just bought a huge carrot & used a peeler to get small shreds of the carrot) + extra @primalpalate pumpkin pie spice & extra cinnamon + pinch of Himalayan salt + 1 scoop @toneitup vanilla plant based protein (OPTIONAL). Stir over low heat. I found I had to continually add in some filtered water as the chia seeds absorbed the liquid.

After about 5 mins stirring over low heat it should be ready to go! I topped mine with blueberries, bee pollen, & paleo cocoa cayenne grain-free granola from @maplenutkitchen (or I’d recommend pecans or walnuts since they both go well with pumpkin & carrot)!

Where my PIZZA πŸ• FANS at?! πŸ˜‰ I just love pizza oh so much and wish there were more dairy-free pizza restaurants out there! Buttt a @califlourfoods pizza with @kitehillfoods ricotta cheese NEVER disappoints 🀀 details below!

@califlourfoods pizza crust + organic pizza sauce + sautΓ©ed broccoli, zucchini, shitake mushrooms, & heirloom tomatoes + @kitehillfoods ricotta cheese (melted to creamy perfection) + @primalpalate amore seasoning! SO DAMN GOOD guys!!!!

To say that I’m now obsessed with making my own pickled red onions is an understatement πŸ™ƒ They’re SO easy and add so much flavor (and color) to any Buddha bowl or toast!

To pickle your onions: slice up an entire red onion, toss it in a mason jar, cover the onions fully with either white vinegar or apple cider (I used ACV), add in garlic chunks, dill, Himalayan salt, black pepper, a dollop of honey (helps with the fermentation), and any other seasonings of your choice! Store in the fridge & your onions should be ready within 24 hours!
