Basmati Rice and Lentils with Homemade Thai Basil Pesto and SautΓ©ed Spinach! πŸ’šπŸ˜‹ .
A delicious and simple #meatless meal.

Herbs are growing in full force and I had a lot of Thai basil. If you haven’t used it before it has very distinct (and amazing) scent and taste. It’s used in Southeast Asian cuisine. I love the flavour it adds to dishes, in fact anytime I order Thai food I get some form of a Thai basil dish! 🌱

I decided to give my pesto a flavour punch and use Thai basil.
Makes about 1-2 cups pesto (perfect for freezing)
.

2 cups fresh Thai basil
2 cups fresh spinach
3-4 garlic cloves
1/2 cup walnuts
1/2 cup peanuts
1 cup extra virgin olive oil (you may need less)
2 tbsp. sesame oil πŸ‘Œ
.

Put all ingredients (except the oil) in a food processor and process until finely chopped
Drizzle in the olive and sesame oil until a desired consistency is reached. Use the sesame oil first. .

Option: cut the recipe in half to make less. I like to store mine in ice cube trays. ☺️ Enjoy! πŸ˜‹

Bruschetta Zucchini Boats! 😍😍 .
Because zucchini and tomato season has finally arrived and I have way too many! πŸ…
.
What you need:
4 small to medium zucchini
2 tomatoes, diced
1/2 red onion, minced
1/4 cup Parmesan cheese, grated
2 tbsp. Fresh basil, minced (I used Thai basil for a different flavour profile)
2-3 garlic cloves, minced
Drizzle of olive oil
Salt and black pepper to taste
1/3 cup mozzarella shredded (optional) .

1️⃣ Boil zucchini in large pot for 7-8 minutes or until they soften
2️⃣ Remove from heat and slice length wise. Use a spoon to scrap out the seeds making room for you mixture.
3️⃣ In a separate bowl mix together diced tomato, onion, garlic, basil, salt/black pepper, parmesan and a drizzle of olive oil.
4️⃣ Preheat oven to 400F
5️⃣ Stuff zucchini boats with bruschetta mixture and top with shredded mozzarella
6️⃣ Bake for 10 minutes and enjoy! πŸ˜‹

Keeps well in fridge for 4-5 days! .

A super simple way to keep your gut microbe party happy all weekend long! ☺️ .

What you need:
1 cup fresh or frozen fruit - I used freshly picked raspberries and some frozen kiwi πŸ₯
1-2 bottles @tonicakombucha blueberry kombucha or your favourite kombucha flavour
Popsicle mold .

1️⃣ Place fruit in mold
2️⃣ Top with kombucha
3️⃣ Freeze for 4-6 hours and enjoy! πŸ˜‹

Protein Packed Overnight Oats topped with freshly picked local raspberries! 😍😍 .
This super simple recipe is perfect for busy mornings. It’s loaded with protein and fibre, which will keep you feeling satisfied all morning long. πŸ™Œ

What you need:
1 cup rolled oats
1 and 1/4 cups almond or coconut milk
4-5 tbsp. vanilla hemp yeah protein powder (or 1 scoop of your protein powder) @manitobaharvest
1 tsp. cinnamon
Toppings of choice
.

1️⃣ Mix cinnamon, vanilla protein powder, oats, and milk together. Place in large mason jar or or airtight container overnight.
2️⃣ In the AM split into 2 servings or save one for the next morning and top with your choice of fruit and nut. Option to warm the mixture up.

I topped mine with freshly picked raspberries and flaked coconut πŸ₯₯πŸ˜‹ .
I finally tried @manitobaharvest organic plant protein powder and I LOVE it!! There is 20 g of protein, 2 g of omega 3 and 6s, and 3 g of fibre per serving (and it tastes great). ☺️ .
