4 Ripe Avacado - 2 mashed the other 2 cut up in chunks
1 red onion medium size, chopped
A handful of fresh coriander, chopped
Juice of 4 limes
Salt, sugar and pepper to taste
1 -2 tbsp greek yogurt
In a bowl add in all the ingredients and mix well and place in fridge to cool.
Scrape all of the delicious goodness into a serving bowl and serve with a platter of multi grain tortilla chips. For a healthier snack, serve with raw cucumbers, carrots and tomatoes cut into sticks/wedges. It makes a great party appetizer!
