I am sure you have heard of the Turducken. But have you heard of the Picaken? I just found out about this delicious creation this week. So, my Thanksgiving surprise to the kids was a Red Velvet, Coconut Cream Pie, and Chocolate Chip Pecan Pie all covered in Cream Cheese Icing. My First Picaken Creation. Happy Thanksgiving!! There are many things that I am thankful for this year but the one that ranks too on the list is that today all my children will be sitting around our table. It has been a year of changes for our family. Full time Bus Life, leaving our oldest daughter, Katie not feeling well, moving back into our stick and brick house, Sierra moving out, Jeff in SC while the rest of us are in TN, but today we are hanging out, eating, and decorating the house for Christmas. We have much to be thankful for - we have US!! Check back tomorrow to find out the surprise I have for the family that involves this Red Velvet Cake, Coconut Cream Pie, and Chocolate Chip Pecan Pie. In the process of converting buses for others, we have installed many different types of refrigerators. I will have to say this is my personal favorite so far. I was able to pack 7 dinners, 5 lunches, snacks, and breakfast foods in this Haier compact refrigerator. I will say this might not be the best options for a bus that is total solar. So, I am looking for some options. What type of refrigerator do you have on your bus?

There is one thing and only one thing that Jeff saw at the Tiny House Jamboree that he has NOT stopped talking about. It is on the @schooloflifebus bus. Travel days for us mean a break from the traditional school books. A homeschooling mama long ago told me something that I have never forgotten. She said that we must give our kids hooks to hang knowledge on. It is great for them to know about sheep, but unless they touch a sheep, hear a sheep, smell a sheep they will never know sheep to the fullest. In Lousiana, our kids learned about mound builders. They walked the mound, envisioned the natives taking bucket load after bucket load of dirt to build the mound. They saw first-hand artifacts that were left by the builders. On this day, they didn't learn from a book. They created a hook! What fun and interesting hooks have you created while roadschooling?

After getting a tour by @transcendexistence of their bus, Jeff is contemplating raising a roof. If you ever have the opportunity to catch a glimpse of #transcendence, flag him down, knock on their door and ask for a tour. I sure do miss our bus and life at Skoolie Beach. One day, we will return to full-time bus life but for now, we are back in TN. Jeff is taking care of Skoolie Homes business between SC and TN. Life is not as we had planned, but I will have to say it's getting better. Maybe one day soon, you will see a blog post all about our decision. For now, we are just looking forward to weekends when we get to put our toes in the sand, eat seafood, visit family, and work on our bus.
