Vegan pancakes 🌸🌱🥞
So, this is what I normally have for breakfast, I just can't get tired of them. 😍 They're also perfect for when you're bulking and want something sweet but with low % of fat, high in protein and fiber. 👌🏻#goodmorningnyc .
This recipe makes 3-4 pancakes
2/3 cup of oat flour (you can make it yourself by grounding the oats with a blender or food processor).
1 scoop vegan protein powder, I use Vega Protein Sport (Using protein is optional). .
1 cup almond milk
1 smashed banana
1 tbsp of chia
3 tbsp of water
1 tbsp of grounded flax seed (you can ground it yourself as well)
Dash of cinnamon
1/2 cup of mixed berries
•In a little bowl add the chia and mix with 3tbsp of water, this is an egg replacer. Let it sit in the fridge. .
•Put all the dry ingredients together, oats, protein, flax seed and cinnamon. Mix with a fork so there's no lumps of protein or flour in the mixture. .
•Add the grounded banana to the dry ingredients. Mix well. Then incorporate the milk. .
•Once it's all mixed together, add the chia to it.
•Preaheat the pan on medium flame.
•Pour 1 teaspoon of coconut oil, if it's a non stick pan you can skip this, but I like the flavor coconut oil gives to the pancakes. .
•Pour a small-medium amount of batter and cook on low heat. If you cook it higher they'll get burned 🙈🔥Low heat is necessary to cook them throughly and not just cook the outside. .
•Top the pancakes with the mix of berries. .
•I use @waldenfarmsinternational maple walnut syrup that has no sugar. .

Fat: 11.1 gr
Protein: 52.8 gr
Fiber: 20 gr
(If you're not using protein powder take 25gr of protein away from the counting). .
