OCTOPUS WITH PUREE AND TROPEA ONIONS

INGREDIENTS

for the octopus:
-2 small octopuses
-2 red Tropea onions

for mashed:
-500 ml of milksachet of puree already readybuttersalt

Peel the two red onions and cut into thin slices (in case you do not particularly like the onion if you can only use one), then place them in a pot with high sides .Lay the two octopuses on top of itwithout adding anything else inside the pot (salt, oil, water ...).Cover everything with a lid and cook over very low heat for about 2 hours .At the end of the first hour, check the cooking point and gently turn the octopus .You will notice that you have created a sauce , it is the water of the octopus that will be evaporated at the end of cooking (after two hours).In the meantime, prepare the puree with which we will garnish the octopus. In a saucepan, then put 500 ml of milk , a knob of butter , a pinch of salt , a bag of mashed potatoes ready and mix well with the ingredients. Observe the cooking times indicated on the envelope.After cooking the octopus is time to serve !! Take the octopus, remove the tentacles and place it carefully on a serving dish ... with cooking it has become very softand there is a risk that it will break.Add the onion puree and place in the center even the mashed potatoes !  Benedetta Parodi in her recipe has also garnished the dish with two thyme sprigs ... for beauty.
