Cake for breakfast?! And made from oats?! 🍰 YES PLEASE 🀀 #FRIYAY My newest creation and latest obsession (for those mornings when I want to wake up and put my face into a cake 🀣 #weALLhuman) is my macro friendly oaty breakfast cake with ALL the toppings; created by simply making your usual bowl of egg white protein oats and leaving in the fridge overnight to chill and set! After not feeling too special yesterday and buying some fresh ready made soup from the shop to soothe my tummy, I have to say - I was not impressed (no brand shaming here tho)! 🀣 And I realised that nothing quite beats a homemade soup, which inspired me tonight to create this delicious Italian beef & Chunky vegetable soup! 🍜 Not only is this a delicious fuss-free feed the whole family recipe, it would also make a great food prep to spice up those same old boring meals! πŸ’πŸ½
(Feeds 4) All you need is πŸ‘‰πŸΌ
500g beef brisket, completely trimmed of fat cut cut into large chunks
300g halved new pots, skin on
300g peeled carrots cut into chunks
2 diced red onions
3 sticks celery diced
6-8 cloves garlic finely chopped
1 x Tin Italian chopped tomatoes
2 litres thin beef stock (or stock pot mixed with building water)
1 x Tablespoon olive oil
1 x Tablespoon wholemeal plain flour
1 tablespoon dry Italian herbs
1 x teaspoon paprika
Dash Worcester sauce
Salt and pepper
Chopped parsley to serve
Method πŸ‘‰πŸΌ
Pop flour salt pepper and paprika into a plastic food bag, add beef chunks and shake until coated. (Discard remaining flour)
Heat olive oil in large saucepan or casserole pot and brown the beef on all sides. Remove from pot. Deglaze with a little beef stock (scrape all the lovely bits off the bottom) and retain in a bowl, setting aside. Lightly fry onion and celery in fry pan until translucent and soft. Add chopped garlic for another few minutes.
Add onion, celery, garlic, chopped tomatoes, Italian seasoning, beef, remaining stock, Italian herbs, Worcester sauce, salt and pepper to pot and bring to boil. Then turn down to simmer for 45 minutes, stirring occasionally. After 45 mins, add the carrots and potatoes and simmer for further 45 mins or until beef is nice and tender.
Serve in bowls (or portion into containers for prep/freezing) with a sprinkling of chopped parsley (I also added a few griddled courgettes chunks!)

Happy Tuesday all! 🍳 My breakfast this morning before a back to back morning of clients to fuel me up is two eggs poached in apple cider vinegar, grilled aubergine (I buy the ready to cook pre-chargrilled frozen slices from @tescofood) and a slice of @hovisbakery lower carb wholemeal toast 😊 Simple but delicious. And this is how the Pruce's Sunday πŸ™ŒπŸΌ A tasty Spanish chicken inspired one-pot-wonder - curtesy of moi πŸ’πŸ½πŸ— That chorizo and potatoes tho 🀀 This is definitely one to bookmark to feed the whole family fuss-free (just 10-15 minutes worth of prep before it's chucked in the oven and left until ready!) πŸ€—
Recipe πŸ‘‡πŸΌ
(I used a whole large corn fed chicken )
1. Season the chicken well with salt and pepper and then brown in a large frying pan in a little @frylighthq butter spray. Once browned removed, and discard any extra oil. Stuff the chicken cavity (lols) with half lemon and dried bayleaves.
2. In the same pan, fry your sliced chorizo until its natural oil is released l, then add your part-boiled halved new potatoes and fry until browned. Then add whole unpeeled garlic cloves (I used a whole bulb of garlic) and 150ml chicken stock (I got mine from @sainsburys) - bring it to boil and then turn the heat down, letting it bubble away for a few minutes.
4. Pop your chicken in a large casserole pot, add the potato, garlic, chorizo and stock around outside, a sprig of thyme, then pop the casserole lid on and roast for approx 1 hr 15 mins (or until chicken cooked through)
6. Once the casserole is done, remove from the oven and leave to rest for 15 mins.
7. Serve sprinkled with fresh parsley and veg or salad of your choice πŸ˜€(I would say this Feeds at least 4!) #familyhealthy #healthyeating #fitnesstothetable #familycooking #familyrecipes
