Nope, this isn't a Lebanese take away - this is a healthier homemade version! ๐Ÿ˜ Chicken shish is one of my favourite takeaways; granted it's relatively healthy, but it often comes with unnecessary amounts of oils and fats, making it much more calorie dense than it needs to be! I'm all about fake-away-ing it, to make it more calorie friendly but EQUALLY as delicious! ๐Ÿ˜Œ๐Ÿ™ˆ So here we have homemade chicken shish tauk! Marinated chicken skewers served with a folded flat bread pita and a traditional Lebanese salad, consisting of pickled peppers, a cabbage slaw, shredded lettuce, white onion, cucumber and tomatoes! ๐Ÿค— How to make the Lebanese garlic & chicken chicken marinade (this marinade makes enough to cover around 4 Kebobs) ๐Ÿ‘‡๐Ÿผ - 2-3 grated garlic cloves
- 6 tbsp fat free Greek yoghurt - the juice of half a lemon
- 1 tbsp olive oil (can sub for low kcal olive oil spray e.g @frylighthq)
- 2 tbsp Apple cider vinegar
- 1/2 tsp paprika - 1/3 tsp ground ginger
- 1 tbsp tomato purรฉe
- 1/3 tsp dried oregano - 1/3 tsp ground black or white pepper
- a pinch of salt to taste

Raspberry & Coconut protein loaf cake! ๐Ÿฐ Just incase anyone feels like getting their bake off on this weekend, I thought I'd share one of my favourite recipes with you! ๐Ÿ™ˆ
Ingredients ๐Ÿ‘‰๐Ÿผ
- 2 scoops vanilla whey protein
- 1/4 cup milk (I used @alpro unsweetened almond)
- 1 cup oats (I used @mornflake)
- 2 whole eggs (or egg replacer: e.g flax eggs, mashed banana, apple sauce ect)
- 1/4 cup melted coconut oil
- 60g egg whites (I used @twochicksproducts)
- 1 cup sweetener (optional: I used @sukrinuk)
- 1 tsp baking powder
- 1/2 cup of each: fresh raspberries & fresh blueberries
- 1/2 cup coconut flour (I used @sukrinuk)
- 1-2 tsp cinnamon - 1/4 cup desiccated coconut (optional addition)
Directions ๐Ÿ‘‰๐Ÿผ
1. Pre heat oven to 175 degrees Celsius
2. In a bowl, combine all of the wet ingredients (minus the berries) and whisk together. In a separate bowl, mix together all the dry ingredients.
3. Pour the whisked wet ingredients into the dry ingredient bowl and whisk together until smooth.
4. Carefully fold in the berries, trying not to split them.
5. Grease a loaf tin (I used @frylighthq coconut spray) well before pouring in your mixture.
6. Bake for 30 minutes and then remove from the oven.
7. Cover the loaf with tin foil and then bake for a further 20-25 minutes until cooked all the way through.
8. Once cooked, remove from the oven and leave to cool for 10-15 minutes (you want it to still feel slightly moist to touch to avoid the cake drying out once cooked). 9. Lastly and optionally, I glazed my cake with some @carefreefoods strawberry zero calorie syrup to add a nice sticky moist texture to my loaf cake, before sprinkling with a little dedicated coconut.

Apple pie french toast tower! ๐ŸŽ๐Ÿคค Cinnamon & vanilla french toast fingers topped with red apples caramelised in @sukrinuk brown sugar, cinnamon & @frylightuk coconut, topped with a generous drizzle of @musclefooduk SF syrup and a dusting of @sukrinuk zero kcal icing sugar... now THAT is how you #friyay ๐Ÿ˜๐Ÿ™Œ๐Ÿผ I also tried out @hovisbakery new lower carb bread and I loved it! (9g per slice anyone who is wondering, and I purchased from @tescofood ๐Ÿค—) Here is how I made this yummy breakfast delight! ๐Ÿ‘‡๐Ÿผ
Caramelised Apple ๐ŸŽ:
1. Spray fry light into saucepan and add your chopped apple, along with some cinnamon and 1 tbsp Sukrin gold.
2. Add a lid to the saucepan and simmer for 8-10 minutes, stirring in between until the apples have softened.
French toast ๐Ÿž:
1. In a large flat dish, whisk together 90g egg whites, 1 tbsp whey protein (I used @musclefooduk vanilla whey), another tsp of cinnamon and 1-2 tbsp unsweetened @alpro almond milk
2. Place your two slices of chosen bread in the dish and leave them to soak up the mixture, flipping over onto the other side after 3-5 minutes or so.
3. Once the slices of bread have absorbed the mixture, heat a pan with some more frylight and let it get hot.
4. Turn the heat down to a medium heat and add your french toast to the pan. Cool for 5-6 mins each side until the french toast is gold and crisp.
5. Slice up the french toast into strips, stack it up on your plate, add the stewed caramelised apple on top and drizzle with syrup, cinnamon, Sukrin icing sugar and DEVOUR! ๐Ÿ™ˆ

MEXICAN NIGHT! ๐ŸŒฏ Incase you hadn't already noticed, I like to hop around the world for my evening dinners ๐Ÿ™ˆ I strongly believe a variety in flavours is the key to consistency when it comes to sticking to a healthy diet! Here we have my all time favourite way to use up that left over chilli portion... Enchiladas! ๐Ÿ˜ I simply filled two @musclefooduk low carb tortilla wraps with my left over lean @musclefooduk beef mince chilli, spread over some tomato purรฉe and low fat grated cheese and oven baked for 15/20 minutes until they were deliciously crisp, before serving with some homemade avocado, red onion, chilli & lime guacamole ๐ŸŒถ ๐Ÿฅ‘ DELISH! Italian inspired dinner tonight! ๐Ÿ I just tucked into a delicious bowl full of @sainsburys courgetti topped with my FAVE @heckfooduk chicken Italian meatballs and a homemade spicy tomato sauce, consisting of Italian chopped tomatoes, crushed chilli flakes, black pepper, dried oregano & red onion ๐Ÿ™Œ๐Ÿผ Super simple but super delicious and literally took under 15 minutes from start to finish! ๐Ÿ™ƒ Making healthy cooking interesting does not have to be time consuming and making your food flavoursome & satisfying will benefit you in the long run when it comes to staying consistent! ๐Ÿค— What's on your #humpday dinner plates tonight? โค๏ธ๐Ÿ‘‡๐Ÿผ

SWIPE RIGHT ๐Ÿ‘‰๐Ÿผ Low carb Vietnamese fake away! ๐Ÿฒ Introducing my super easy, super healthy and super delicious take on my favourite chain take away - Pho! ๐Ÿ˜ This is a king prawn & courgetti pho soup, with a no-fuss quick & easy homemade broth that's packed full of delicious flavours and doesn't need any crazy 48 hour cooking or purchasing of bones and all sorts! As you can see from the photos, the Broth is made by simply boiling fresh chilli, red onion, ginger, lemon grass, star anise and garlic for 10-15 minutes. I then simply added to a bowl some @sainsburys courgetti (of course you can use any noodles here!) and cooked king prawns, button mushrooms, fresh lime, fresh basil, mint & coriander leaves, radish, bean sprouts, a splash of soy sauce and some more fresh chillies, before pouring over my hot broth and serving! ๐Ÿค— Creative cooking DOES NOT mean time consuming cooking! It's a super simple & effortless (ok, some would say slightly lazy ๐Ÿ™ˆ) dinner for me tonight, consisting of a poached @musclefooduk salmon fillet with a squeeze of fresh lemon, paired with a tenderstem brocolli, quinoa & kale side salad that I picked up from @waitrose yesterday (and forgot to eat haha!) ๐Ÿค— I'm all for making creative, interesting and fun dinners, and investing effort into/saving some time to do so, but sometimes everyone needs a quick and easy dinner that can be thrown together in minutes! Which is why I often find it frustrating when people say they don't 'have time' to eat healthily. For example, with this dinner here, I could even have gone as far as even buying a pre-cooked salmon fillet and literally shoving it all onto a plate, cutting out the already minimal 10 minutes cooking time! ๐Ÿ™ƒ Obviously I LOVE cooking, and ALWAYS spare myself time to get creative and innovative in the kitchen for dinner, but I'm just trying to point out that eating healthily can definitely not be described as 'too time consuming!'.
