Chef Danilo B. Tangalin Jr and I are throwing down 12 courses July 22nd at @Cosecha SD !! This menu will be made up of 6 cuts Berkshire Kurobuta pork and 6 cuts Imperial wagyu these are both domestic products and are the closest in quality to Japanese pork and Beef . We are so pumped to use this product for this dinner because we are able to get bone in cuts that Japan will not export! We have been walking the fields of Wild Willow Farm starting the menu development process you know we'll be throwing down some bad ass Filipino Flavors in the mix!! This dinner will include 8 wine pairings and of course 100% of the produce from local foraging and wild willow farm! We are so excited to bring this progressive 16 course dinning experience to San Diego in our private dinning room in the heart of Barrio Logan May 20th. The menu will be composed of 8 plated courses and 8 small speed courses with 8 wine pairings plus an arrival sparkling. The menu will have items such as fresh pasta, pork belly, kurobuta pork chop, dry aged angus beef, Japanese Wagyu, sous vide fried chicken, locally sourced seafood from Catalina offshore, Lamb shank, produce from our beyond organic farm Wild Willow Farm, hand foraged ingredients from south San Diego and so much more.
