Appetizers, entrees, and desserts were required components in the California Restaurant Association Foundation's ProStart Cup competition that I shot this past weekend. ProStart is a 2 year high school culinary program for Jr's and Sr's . Winners of this weeks Cup not only receive scholarships but also go on to National competition. A timed one hour window, and 2 gas burners for the teams to create their masterpieces makes for some stressful conditions. I was amazed at the capabilities of these kids.
