Recipe Alert: Greek Meatball Lettuce Wraps
16oz Traders Joe's 99% fat free ground turkey
8oz Traders Joe's 96% fat free ground beef
1/4 cup panko bread crumbs
Mix above ingredients together with mint, parsley, salt, black pepper, garlic and red onion. Make 15 meatballs and saute in a pan with Trader Joe's coconut oil spray.
*1/4 cup of bread crumbs contains .25g fat, 11g carbs, 1.5g sugar and 1.5g protein.
1/2 cup Trader Joe's 0% Nonfat Plain Greek Yogurt
Mix the yogurt with cucumber, lemon juice, garlic, salt and pepper.
*1/2 cup of yogurt contains 3g carbs, 3g sugar and 11g protein.
2.5oz Traders Joe's light feta cheese
Chop 1 cup each of tomatoes, cucumbers, red cabbage, green cabbage, 1/2 cup of red onion with parsley, mint, salt and pepper.
*I cut the feta cheese into .5oz and top my wraps with the cheese at work. Feta cheese contains .75g fat and 2.5g protein.
I used iceberg letter to wrap everything together! This was delicious and faster to make than I thought it would be. It makes 5 meals of 4oz of protein.
