The lights inside the sushi restaurant give off a subtle glow. The bustling conversation of people fills the space with a collective din. Servers swerve in & out of tables, dropping off rolls & bowls of soup. The lights lower even further & collectively, the entire staff inserts ear plugs to block out the impending shred. A standard evening in Salem, Massachusetts as Larson fires up his bass amp & with Redbush bandmates starts the evening off with a long, seductive riff. Food continues to be consumed. Larson is in the middle of a three week tour from Laramie to the east coast. It is the overlay of these realms, food & music, that actually speaks directly to the some of the things that Larson values most in this life.
Larson is soft spoken, but plays a loud guitar. Old Haunts, Redbush, & Wynona are the bands in which he currently plays. He was first inspired to engage in music making by his mom Bing, who played guitar while he was growing up. In the high school band days he picked up the clarinet, graduating soon to bass clarinet (“fewer notes to learn”) but the desire to participate in rock bands was soon gleaned while attending the school talent show & seeing some of his friends jam. “I asked my other friends to play with me & picked up bass because no one else in that group played it. I haven’t stopped since.”
He’s also a big time foodie. This man has made food (remember that lamb with raspberry reduction, Larson?) that I daydream about, no joke. He fears no style, or ingredient, & has recently begun dabbling in making his own soup stocks. Just yesterday I overheard him ask about someone’s Christmas ham leftovers, “do you still have the bone?” for use in a stock later. His fiancé Kaylee has been exploring the science of bread baking, so you can bet that a meal with them is one of special note. The appreciation for food, “has a lot to do with how we were raised, almost always eating at our dinner table as a family. I appreciate the act of eating something delicious. The visceral feeling of eating, the sense of community, as well as the reflection of culture” all enhance the experience that cooking & eating bring together. Thanks Lars Bars!
