Its has been such a pleasure to be part of the process of revamping the staff restaurant in the Condé Nast building at 4 Times square, designed by Frank Gehry in the late nineties.

I have met a number of remarkable people during our 3 years in USA.
The most notable one is probably this woman.
Peggy Dulany, daughter of David Rockefeller. She has devoted her entire adult life to serve humanity.
She meets strangers with curiosity, attention and a loving eye for the unlocked potentials that most people carry.
She is mostly renowned for having founded Synergos with her father. I have come to know Peggy through Stone Barns Center for Food and Agriculture(home of Restaurant Blue Hill Stone Barns) where I am an advisory board member, and through her interest in the work we are doing in Brownsville. Also I have even had the opportunity to cook for her in her home😊

Pia Zinck just won silver while graduating as a chef with top grades. Also she was elected “best friend” by her classmates. Pia and her four siblings lost their father 5 years ago and their mother 11 month later. Pia was handed a brochure about grief from the public authorities, but took her own route away from the darkness. At Hotel Sakskøbing we are so proud of having such a tough and such a loving girl at our team.
