NANA ice-cream smoothie bowl with peanut butter πŸ˜‹πŸ˜‹πŸ˜‹ because i am the best I made this for my BF when he got home from work! 😜 I don't really have time to spare from my uni work but this only took me max 3 minutes so it's ok!

It includes a frozen banana, some honey (or u can use Rice malt syrup), vanilla extract, almond milk and natural peanut butter! So quick and so easy and so yum. Why did I not make it for myself again? πŸ€”

I am not a mother but I am so very passionate about the #foodrevolution (@foodrev) day, initiated by the amazing @jamieoliver
.
I'm a former teacher, having experienced working in both Sydney and London and I can honestly say I have seen first hand the effect that food has on children. I can't speak as a mum but I can speak as someone that is so passionate about healthy eating. Children's obesity is linked with adult obesity, which is linked to a whole range of serious conditions and diseases such as T2 diabetes and even several types of cancer.

I experienced first hand the behavioral problems in children after first lunch (recess) and second lunch, that could quite often be directly related to what they ate on their break. A lot of the children I taught in London would have 2-3 sports and energy drinks throughout the day, who could sit still and focus after that?!
.
If this is something that you also feel passionate about then pass it on!! .

πŸ”ΈChocolate CakeπŸ”Έ
Ingredients:
2 Cups Almond meal
1/4 cup unsweetened cocoa powder
2 Tbs ground flax seeds
1 tsp baking powder
2 flax eggs
Β½ cup Rice Malt Syrup
1/4 cup melted coconut oil
1 tsp vanilla essence
Method:
Pre heat oven to 180˚C
1. Add dry ingredients to a bowl and mix until combined
2. Add wet ingredients and mix until well combined
3. Pour all ingredients into a round 8 x 8 inch baking tray
4. Place into preheated oven at 180˚C for 25 - 30 mins,or until golden brown
Chocolate Icing -
Ingredients:
Β½ cup pitted dates
Β½ tsp vanilla essence/extract
1.5 Tbs unsweetened cocoa powder
5 Tbs unsweetened almond milk (add more or less to desired consistency)
Method:

1. Place dates in blender and blend until they start to clump and become a paste
2. Add the rest of the ingredients, yet slowly adding 1 Tbs of almond milk at a time, and continue to blend until well combined.
3. Spread evenly onto cake and enjoy! .

These bliss balls are my raw brownie recipe but I also added a little bit of Acai powder today just for an extra antioxidant boost. Adding this added a little bit of 'tang' to the bliss ball! I'll post the recipe below πŸ‘‡πŸ½

Ingredients:
140g raw cashews
180g dates
12g unsweetened cocoa powder

Optional: 6g acai powder for an extra boost of antioxidants
1. Add cashews to a blender and blend into a flour.
2. Add the dates, cocoa powder and acai powder and blend until combined
3. Roll into balls and enjoy!

FREEZE DRIED FRUIT "CHIPS" !!🍐 these are just the best snack! I have them at home, at uni, at work and often paired with some nuts to lower the GI when snacking! I love how it's fruit, but with a different (and crispy) texture πŸ€— Each packet is also 1 serving of fruit, I have 2 servings here, 1 x mango and 1 x pear.

VEGAN CHOCOLATE CAKE! Completely free from eggs, milk, butter, dairy, gluten & refined sugar. So many times I have been asked if this recipe of mine can be made vegan (omitting the eggs) and I had not tried it myself, but now I have.. And the verdict is.. It's amazing!! I honestly had some doubts but I must say I am so happy with how it has turned out! So to all the vegans out there.. This chocolate cake is for you! 😘

Ingredients:

3 INGREDIENT RAW LEMON BLISS BALLS! Aka little bliss balls of citrus yumminess πŸ˜‹ . I'll be back to some experimenting and reworking those coconut rough this weekend!! Are there any other bliss ball flavour combos you'd like me to try?

πŸ”Έ3 Ingredient Lemon Bliss Balls πŸ”Έ

Ingredients:
140g @lucky.nuts raw cashews
180g dates
Juice of 1 lemon and zest of 1/2
Method:

1. Add cashews to a blender and blend into a flour.
3. Add the dates and blend until just combined
3. Add the juice and zest of the lemon and pulse a few times then blend. Be careful not to overblend at this point or they become too sticky
4. Roll into aprx 10-12 balls
Store in the fridge and enjoy! ..

THIS πŸ™ŒπŸ½ and by diet, I mean some form of restriction. The "diet" that will do the most for you is one of balance and one that contains as little refined and processed foods as possible! I'm sure everyone has heard this before and I know it is quite often easier said than done, but I love listening to nutrition and health related pod casts on my drive to uni/work and no matter the topic or area discussed it always comes down to 2 things, balance, and eating more fruits and vegs.

RAW CHOCOLATE 'truffles' with a CARAMEL CENTRE! I've had another really busy few days and haven't had time to make anything new 😞 so I thought I'd share another one of my faves! My raw choc slice rolled into balls. I assure you that if you like oats and chocolate, then you will love these! .

πŸ”ΈRaw chocolate slice with salted caramel fillingπŸ”Έ
Ingredients:
1 cup oats blended into a flour
1 cup almond meal
2 Tbs unsweetened cocoa powder
1/3 cup rice malt syrup
ΒΌ cup melted coconut oil
1 cup dates
2 Tbs water
3 Tbs almond milk
2 pinches ground sea salt
Method: 1. Add oat flour, almond meal, cocoa powder, rice malt syrup and melted coconut oil to a bowl and mix well until combined
2. Take half of the mixture and press down into a container to form the bottom layer and place in fridge
3. Add dates and water to a blender, pulse and then blend until they clump
4. Add the almond milk and sea salt and blend until desired caramel consistency
5. Add all caramel as the 2nd layer
6. Add the rest of the oat mix to the top of the caramel without pressing down too hard (or you will lose the caramel layer)
7. Place in the freezer for approximately 15 min to set. Or the fridge for aprx 30 min to set.
Note: needs to be stored in the fridge
