This was on my story yesterday but way too good not to share!! Brunch after or helicopter ride πŸ™Š at @thefinefoodstore_rocks in the rocks Sydney, 2nd time visiting here and it didn't disappoint!

I had my 30th birthday party last night and I am just feeling so overwhelmed with love, I have the most AMAZING friends!!!! So so grateful I can't even deal πŸ™ˆπŸ™ˆ

COCONUT LEMON & HONEY Energy Balls !! I wanted to post these again as I have updated the recipe from 2 days ago and they now have a much better consistency and texture! So if you saved or screen captured please update!!

They're raw and NUT, dairy, gluten and refined sugar free. And only have 4 ingredients!! Recipe below πŸ‘‡πŸ½

πŸ”ΈCoconut, lemon & honey energy ballsπŸ”Έ

Ingredients:
3/4 cup oats blended into a flour
1/4 cup coconut flour
1/4 cup honey (or Rice malt syrup)
Juice of 1/2 large fresh lemon
-----------
Method:
1. Add all ingredients to a bowl and mix with a fork to combine
2. Let it sit for a minute or 2
3. Roll into approximately 10-12 balls
4. Can eat straight away but can allow them to firm up by chilling in fridge for 5-10 mins -----------
Store in the fridge.
Option: roll in desiccated coconut to finish .

What do I do when I don't have to work on my birthday?? I experiment in the kitchen of course!! Today I turn 30, and I have so many mix emotions!! If you're interested in reading my full birthday post, head to my private page @melissa__eaton as I've posted it there.

But this arvo I made these! Someone asked me recently if I had anything nut free, and you know what, I hardly had anything! I love using nuts as the base for my recipes but considering I like to cater to those with allergies and intolerances, I really need to expand my repertoire πŸ’ so my birthday experimenting resulted in these... COCONUT, LEMON & HONEY (or rice malt syrup) raw energy balls. Tbh I would like to improve the texture but I am happy with the flavour so will share the recipe, and update it when I make them again!

SMOOOOTHIE BOWL!!! Ok so I know it's getting cold in Sydney, but I just can't get enough smoothie bowls atm πŸ˜‚πŸ™ˆ yesterday I had this smoothie at the @schoolyardcafe, a new cafe which has opened locally to me.

I just love that so many cafes now have some kind of option that is healthy and allergy or intolerant friendly! Years ago there was just nothing! I'm so excited for the future and for cafes and restaurants to continue even more in this direction 😍

VANILLA & ALMOND CAKE! With thanks to @sprout_market for the dates which were used in the icing 😍. This is sooo unbelievably easy to make, with minimal ingredients and minimal washing up as well! Literally throw (maybe not literally 😜) ingredients in a bowl, mix, pour into tin and bake πŸ’ I also think the icing complements the cake, so would defs recommend to make them both, not just the cake on its own.

This one is DF, GF, and refined sugar free. As usual I'm sure it can be made vegan with flax eggs and rice malt syrup but I will have to try that next time!

πŸ”ΈVanilla & Almond CakeπŸ”Έ

Ingredients:

2 cups almond meal
1 tsp baking powder
2 eggs
1/4 cup honey
2 tsp vanilla essence/extract
1/3 cup melted coconut oil
Method:
1. Add all ingredients to a bowl and mix until combined
2. Pour into small cake tin and place in pre heated oven at 180degrees Celsius for 25-30 mins
Chocolate icing:
Β½ cup pitted dates
Β½ tsp vanilla essence/extract
1.5 Tbs unsweetened cocoa powder
5 Tbs unsweetened almond milk (add more or less to desired consistency)
Method:
1. Place dates in blender and blend until they start to clump
2. Add the rest of the ingredients, yet slowly adding 1 tbs of almond milk at a time, and continue to blend until well combined.
3. spread evenly onto cake and enjoy! .

HEALTHY BANANA BREAD! 😍 This is a tried and tested recipe that I have had such great feedback from! But I just wanted to try the vegan version this time to make sure it is still ok, and the verdict? .. it REALLY really is!!! Like so good! In fact my mum said she liked it more πŸ˜‚. Without the eggs it obviously didn't rise but the texture was great and actually quite true to a "traditional" banana bread!!

πŸ”ΈHealthy Banana BreadπŸ”Έ
1 cup oats blended into a flour
1 cup almond meal
1 Tbs ground flax seeds/flaxseed meal (omit if using flax eggs)
1 tsp baking powder
ΒΌ cup melted coconut oil
2 (flax) eggs
3 small/2 medium bananas (280g)
ΒΌ cup Honey or Rice Malt Syrup
Pinch sea salt (optional but can help enhance flavour)
Optional: 1tsp vanilla essence
Method –
Pre heat oven to 180˚C
1. Add all dry ingredients to a bowl and mix until combined
2. Mash banana in separate bowl
3. Add wet ingredients to banana and mix until well combined
4. Add dry ingredients to wet ingredients and mix well
5. Pour into baking loaf tin approximately 10 by 5 inch
6. Bake for 40-45 minutes at 180˚C or until golden brown

Strawberry and chocolate "cheesecake" tarts! So I'm going to be a little bit of a tease with these, I was so sure they'd work out, but the chocolate base just didn't go!! I will definitely need to take 2 before I share, but they were just too cute not to share a photo!

I'm on uni break now and I'm thinking about spending my holidays working on an ebook, what do you all think?? I don't want I make it so I stop sharing recipes though, so I'm thinking of making it a convenience thing? as I know looking at a recipe in the comments of Instagram isn't always the easiest!!
