I didn’t really have anything special planned for my birthday this year. In fact, weeks before my special day, I was having the blues! Thankfully though, and just in time even, I got reminded of how blessed and deeply loved I am by God, because He gave me special people in my life who make it complete. So as I now turn 41, I am looking forward in faith, that God will continue to be faithful in my life. I know He has great plans for me and His promises are perfect and true. I know that it’s so easy to buy bottled pesto nowadays but for me, nothing still beats the taste of making it your self. Not only is the recipe easy, but making your Pesto from scratch gives you the liberty in adjusting the taste according to your preference. The usual ingredients include garlic, basil, pine nuts, parmesan cheese and olive oil but I made mine using some peanuts instead of pine nuts. I also added sun-dried tomatoes because I just love how it adds a deeper flavour on most of my dishes and it really goes well with pesto. I also added some malunggay leaves to make it healthier and I added some red pepper flakes to add some kick.

Grilled Chicken in Sundried Pesto Pasta
Ingredients:
500gms Penne Pasta cooked according to package instructions

For the Chicken:
4 pcs chicken breast fillet
Red pepper flakes
Salt and Pepper to taste
2 tbsp Olive oil for searing

For the Sundried Pesto
1 cup sun-dried tomatoes
5 cloves garlic
1 cup basil leaves
1/2 cup Malunggay
1/4 cup peanuts
1 pinch red pepper flakes (or more to taste)
1/3 cup parmesan cheese
1/3 cup extra virgin olive oil
Instructions:
For the chicken:
1. Season chicken with salt and pepper on both sides.
2. Heat up pan, add the oil. Sear chicken on one side to achieve a lovely golden brown color. Switch to the other side and repeat the process. Cook for 2-3 mins per side.
3. Take off heat and let rest for a minute. Slice and set aside.
For the Sundried Pesto:
1. Blend all the ingredients in the Kenwood Blend X- Pro, except the olive oil. Press start and drizzle in the olive oil slowly while still mixing. Stop the blender, scrape down the sides. Adjust seasonings.
2. Place pesto on a saute pan on low heat. Add the cooked penne and mix till thoroughly incorporated.
3. Remove from heat. Plate and top with the seared chicken. Enjoy!
Here’s another tip: leftover pesto can be stored in a jar that has a tight fitting lid. It can be refrigerated for up to one week. Pesto can be enjoyed as a marinade for grilled chicken, it can be added to sandwich recipes or even just spread on top of some french bread with cheese and toasted.

Although this dish looks so plain and simple, it definitely made up for it in taste. My husband requested I make some Clam Chowder tonight and since I’d always order this soup whenever we’re at this particular restaurant, I decided to make my own version. Needless to say, mine tastes a whole lot better! Haha! 😝
——————————————————————— Clam Chowder

Ingredients:
1 kilo Clams, boiled and shelled, boiling liquid reserved
6 slices bacon, chopped
1 whole Onion, diced
5 pcs Potatoes, peeled and diced
2 cups water
30 g butter
1 tetra pack All Purpose Cream
Salt and Pepper to Taste

1. Cook bacon till crisp.
2. Add the onions and cook till translucent.
3. Add the potatoes with water. Boil and cook for 15 mins., uncovered. Wait till it has softened.
4. Turn off heat. Place all ingredients inside the Kenwood Blend X-Pro and use the soup function. Blend for just a few seconds.
5. Put back ingredients to the pot. Add butter. Add clams and half cup of clam liquid. Add more water if needed.
6. Adjust heat to low. Add the cream. Adjust seasoning according to taste.

This has got to be one of the easiest dessert recipes to make. But instead of using mangoes, I replaced it with canned peaches because my husband requested it. Haha! So here’s a Peach Float recipe you can all enjoy which I made more delicious with the use of my Kenwood Blend X-Pro. 😋
Peach Float

1 can peaches, sliced thinly, syrup drained
Another 1 can peaches, syrup drained
2 packs All Purpose Cream, chilled
1 can condensed milk, chilled
300 grams graham crackers, crushed

Instructions
1. Combine cream and condensed milk and mix it with electric mixer to double the size of the ingredients.
2. Place peaches (from 1 can) in Kenwood Blend X-Pro and press “Pulse” to blend the fruit for a few seconds. Once done, place blended peaches together with the cream and milk mixture and mix together.
3. Place a layer of graham crackers at the bottom of a rectangular pan and spread with a layer of the cream mixture. Put slices of peaches on top.
4. Repeat by putting layers of graham crackers, peachesand cream until you’ve used it all.
5. Cover the pan and place in the refrigerator overnight. Serve chilled.
