This is probably my favourite dish we are cooking @parisbutter at the moment.. it eats like a really delicate meat dish and we pair it with a light style Pinot Noir, a fun and delicious course.

A dish back to our menu that has evolved over the years. It came from a time when I was cooking when it was just about being delicious and fun. It has taken me many years to find this place of innocence with my cooking again and I could not be happier. The pressures of business can sometimes effect your creativity’s and it is easy to start doing what you think will be safe instead of what you actually want to create. I am so grateful to the support around me to push the creative process and keep it alive.

Last night some of the Paris Butter crew leant a hand @everybodyeatsnz .. These legends are at @gemmayze_st every Monday and use produce that is en route for landfill to feed 200-300 of Auckland’s finest people who can’t afford to feed themselves everyday.
We turned up and helped to create a menu with of entre, main and dessert with what ever supplies were available. I have so much respect for what Nick and his team are doing and encourage any Industry workers to get in contact and take the Monday challenge which is so rewarding.
I can’t wait to do it again, let me know if you are and we can get a team together. Clever kiwi ingenuity at its best!

One of our first courses tonight that screams summer. Lemon verbena has to be my favourite herb often used for teas and desserts but goes so well with savoury dishes too.

A flash back to the best Christmas present of all.. my first Christmas in nearly two decades that I have had off and been able to spend with half of my family.. one day we will get them all together.
I had lost my love and meaning for the day which had just become a day off exchanging gifts, this year @sinajhenrie showed me just how important and fun the time is without the materialism as she had to spend it far away from her family. A German Christmas Eve feast and plenty of fun traditions to bring the whole family together.

Last service @parisbutter for the year! And what a year it has been.. I am so proud of these guys and what we are doing at the moment, there is so much good energy and a real love for what we do and live for in our little restaurant. We took on a big change 3 months ago and have never been happier cooking and serving our fun style of food.
A huge thank you to our loyal customers and an even bigger thank you to the amazing staff we have that are so passionate about what they do and live in my opinion one of the most challenging lifestyles.

Playing around with Food and wine pairings for our Burgundy wine dinner this Tuesday night ... one of my all time favourite places.

New Zealand Wild Venison
Venison carpaccio & roasted eggplant, charcoal purée , caramelised chocolate , red wine & Chardonnay vinegar
The texture of the raw venison which we marinate in a house made soy sauce is sensational. The charcoal purée changes this dish from a raw feeling dish to a bbq’d one.. the other salty, sharp and sweet components give this little dish a lot of life!
