Food in focus ~ CUCUMBER

Every week on my course, there will be a specific food to investigate. This week, cucumbers. High in water, low in calories, containing small amounts of Vitamin C, pottasium and folate, the cucumber is a tropical plant from SE Asia, belonging to the same family as melons, pumpkins and winter squash. The juice of cucumbers contains alpha hydroxy acids which improves the effectiveness of face masks. The skin contains silica which helps strengthen connective tissue. Both CTM and Ayurvedic medicine describe the cucumber as cool. Chilled slices of cucumber are great to soothe tired eyes and cucumber mixed with yoghurt whether in the Greek or Indian style is a lovely refreshing accompaniment to hot dishes.
