It’s #tacotuesday! One of my favorite ”go-to” recipes is this easy and delicious chicken taco dish. Below is the recipe and check out my IG TV to see the full video! ⬇️⬇️
MISE EN PLACE:
1 medium onion, cut into 1/4 inch, diced
1 jalapeño, finely diced
2 garlic cloves, smashed and finely chopped
1 bunch cilantro stems & leaves separated & finely chopped
Juice & zest of 2 limes
1 tsp cumin
4 chicken thighs julienned (skin and bones removed)
1 cup of crushed tomatoes
1 cup of chicken stock
Sour cream or crema, and cotija cheese for garnish
-Preheat the oven to 300, wrap the tortillas in foil and place in the oven.
-Coat a large sauté pan with oil and toss in the onions with 2 teaspoons of salt. Bring heat to medium high and cook the onions, stirring occasionally for 5-7 minutes.
-Add the cilantro stems, chicken, cumin, lime zest and juice. Stir to combine and season with salt. Cook for 4-5 minutes.
-Add the tomatoes and chicken stock and cook for 15-20 minutes on medium heat. The mixture should still be soupy when done.
-Scoop the chicken mix into the tortillas.
-Top with sour cream, cotija cheese, and chopped cilantro. OLE!
**PICKLED CABBAGE & ONION SLAW**
-Take 1/2 small head of purple cabbage julienned
-1 medium red onion, julienned
-1/2 cup of apple cider vinegar
-2 tablespoons of salt
-1 tablespoon of sugar
-Combine the vinegar, salt and sugar. Set aside
-Toss the cabbage and onions together in a large bowl.
-Add vinegar mixture and let sit for 30 minutes.
-Serve with your super yummy tacos!
