It is home to three post-secondary institutions: the Royal Military College, Queen’s University and St. Lawrence College. Our feature today is for the greasiest yet most satisfying dish, poutine. The dish appears to have originated in rural Quebec in the 1950’s, and has since spread across Canada. The etymological and etiological origin of the dish stems from a restaurateur Fernand Lachance. A customer, Eddy Lainesse, asked to have a handful of cheese curds placed in some French fries, to which Lachance replied: “Ça va faire une maudite poutine!” (That will make a damn mess!), and thus poutine was born. The cheese curds used in poutine is sometimes referred to as “fromage skouik-skouik” (squeak squeak cheese). In 2007, poutine was voted the tenth most important Canadian invention by the CBC, beating out the BlackBerry, the paint roller and the electron microscope. Long live the grease and may we all faire une maudite poutine!
