Chocolate Quinoa Breakfast Bowl 💚 Ingredients:
1 cup uncooked white quinoa
1 cup almond milk, plus more for serving
1 cup coconut milk
2 Tbsp cocoa powder
2-3 Tbsp maple syrup
1/2 tsp pure vanilla extract
3-4 squares dark chocolate

FOR SERVING optional:
Mixed berries
Sliced banana
Coconut sugar
Chia seeds

Instructions
Thoroughly rinse quinoa in a fine mesh strainer.
Heat a small saucepan over medium heat. Once hot, add quinoa and toast for 3 minutes, stirring frequently, to dry up water and slightly toast.
Add almond milk, coconut milk, a pinch of salt, and stir. Bring to a boil over high heat, then reduce heat to low and cook for 20-25 minutes, uncovered, stirring occasionally. If it stops simmering, increase heat to medium-low.
Once the liquid is absorbed and the quinoa is tender, remove from heat and add cocoa powder, maple syrup and vanilla. Stir to combine.
Taste and adjust flavor as needed. Add a bit more almond milk if you prefer the texture thinner.
Serve with toppings and enjoy! •

Cinnamon and Pecan Oven Baked Oats - Ingredients:
1 tablespoon coconut oil
2 cups rolled oats
1 teaspoon baking powder
2 teaspoons ground cinnamon
pinch of salt
1/4 cup coarsely chopped pecans
1/2 cup fresh blueberries
1 large banana, peeled and sliced
1 large egg
1/3 cup maple syrup
2 teaspoons vanilla extract
2 cups coconut milk

Directions:
Preheat the oven to 180°c. Grease an 8-inch square baking dish with coconut oil. In a large bowl, mix together the oats, baking powder, cinnamon, salt and pecans. Pour into the baking dish. Layer the berries and sliced bananas over the top of the oats, spreading evenly. In a small bowl, whisk together the egg, maple syrup, vanilla extract and coconut milk. Mix until well combined. Slowly pour over the oats. Bake for 30 to 35 minutes, or until the top is golden brown. Allow to cool slightly before serving. Store covered with the refrigerator for up to three days. Enjoy!
