Hello Players of the Carton Games,
We have news.

On May 22nd, 2019, we will be unveiling a new flight system. Though we will miss our chips, we want to pay attention to feedback we’ve gotten that sometimes a taster is not enough to truly explore the flavors of our beers. The Carton Conversation Card allows us to better our dialogue with you about seeing beer through the lens of cuisine in our favorite forum, our Tasting Room. This new format should allow us to curate a considered progression through your choices and offer more opportunities for us to digest your feedback.

For $10, you will receive a Conversation Card to choose four tastes. Once you fill out the card, our team will help you decide the best order to move through your samples. After those four, we will progress to a fifth pour. The finished card will be exchanged for a repeat or entirely different option of your choosing, the size of which will consider ABV and flavor impact, on a beer by beer basis.
Still have chips? Don’t worry, they will still be accepted in the Tasting Room.

Sitting on a deck over water and eating fresh seafood is a special privilege of being from the Jersey Shore. Doing exactly that one sunny day, The Wit Whale occurred to us. Having grown up alongside schnitzel, we knew that the esters of classic wit yeast would associate well with the crunch of fisherman’s platters, while a drinkable malt bill of 50% wheat and 50% pilsner would accompany the sweetness of the fish themselves. We relied on the mineral profile of our water, dressed-up with lemony Sorachi Ace and grassy Summer hops to play with the richness of shellfish. Drink The Wit Whale because you have a basket of fish in front of you, and you can see the water where it was caught.

May is a time for palate cleansing. Stepping past the heavier flavors appealing in the dead of winter, we arrive at the sprightlier flavors of spring and summer. In our attempt to rejuvenate, we interpreted Chef Paul Liebrandt’s mid-course of green apple wasabi sorbet as a sour ale. Pureed green apples from France are added to the fermentation in order to define the familiar acidity of a lactic sour, then the beer is “dry-hopped” on fresh wasabi roots. In Intermezzo, sweet and piquant whiffs of real wasabi cleanse the bright tartness of green apple while the nutty finish of the kernel of pale malt is left to eradicate winter’s weight. Drink Intermezzo because it is time to refresh.

Chris and Augie grew up as neighbors next to the hiking trails of Hartshorne Woods Park. Back then, trail mix was called G.O.R.P., standing for Good Old Raisins and Peanuts, which described it perfectly. Familiar and dependable, G.O.R.P. trail mix was a combination of clean and complimentary flavors appropriate for being out on the trails. With G.O.R.P. beer, we evoke recollections of fun and flavors of the trails by adding peanuts and chocolate to a robust porter base that is then fermented on black raisins. Drink G.O.R.P. because it is fun to take the mix off the trail.
