Because I had so many sweet potatoes left from my last @milkandeggscom delivery, I decided to go with toaster oven roasted cinnamon sweet potato fries topped with almond butter. YUM. 🤤🤤
Pre-heat oven to 415°F. Slice sweet potatoes into French fry style sticks. Toss in coconut oil & cinnamon then roast for approx. 20 minutes, flip, and bake for another 15-20 or until desired crispy-ness. Top with almond butter, honey, coconut flakes…whatever tickles your fancy. Consume alone OR share with friends.💯🥳

Cooked the TJ’s gnocchi on the stove top in ghee for about 10 minutes - until both sides were golden brown. Served with two hardboiled eggs from @milkandeggscom, bell pepper, microgreens & Pesto. Happy Tuesday 👅 BRB while I go devour this

Celebrating with a traditional sweet potato fry bites + ketchup. What type of FRY are you craving today??
Da deets:
Preheat oven to 400 degrees. Peel sweet potatoes; cut in half crosswise and then into wedges about 1 inch wide. Crush garlic clove in its skin.
On a rimmed baking sheet, toss sweet potatoes with garlic, olive oil, crushed red pepper, and salt. Roast until soft, about 30 minutes.

Have you ever tried sautéed purple cabbage? This was my first time giving it a go, and I’ve got to say I LOVED It. 👏🏼👏🏼 I sliced up a whole cabbage and cooked it in some ghee & everything but the Bagle Sesame Seasoning. Paired it with two crispy fried eggs, sauteed zucchini & bell pepper (under those eggs somewhere!!), spinach & a piece of toast with avo that didn’t fit on the plate! This combo comes highly recommended from meeeee! Happy Tuesday friends! 🙃🙃

I mean, what better way to lunch than with this salmon, greens + quinoa power bowl? Try and convince me otherwise, do itttt.😋
I was feeling lazy so for my Salmon I went with a simple broil: Preheat broiler and set rack 6 inches from heat source. Toss 1 tbsp ghee with ½ lemon + S&P. Coat both sides of filet with sauce. Line pan with parchment paper and place filet, skin side down on baking sheet and broil until the desired degree of doneness..approx. 8-10 minutes.

Remaining Bowl deets:
Spinach base with red onions, cucumbers, cherry tomatoes, tri-colored quinoa & broiled salmon paired with @meowmeix’s creamy honey mustard dressing. This combo was SO GOOD.

Amanda’s Honey Mustard Dressing:
(Makes 10 tbsp total - 22 cals each)
1/2 cup Plain @YQbyYoplait
2 tbsp Dijon mustard
2 tbsp honey
1 1/2 tbsp cider vinegar
1/4 tsp garlic powder
1/4 tsp sea salt
BLEND until creamy!

Easy Vanilla Overnight Oats. 👅👌🏼 It’s fair to say that Overnight Oats are quite possibly the best thing to happen to breakfast. At least easy grab & go breakfast. 👏🏼
If you’re new to Overnight Oats (it’s ok, we all have to start somewhere), let me tell you a few reasons why they are the GOAT.
Easy to clean up, you can make them in practically ANY flavor, you can Meal Prep them for the entire week – making healthy breakfast a no brainer.
Like I said, the best.

To Make:
1/2 cups old fashion rolled oats
1 cups vanilla almond milk
1 tbsp chia seeds
½ tsp vanilla extract
Toppings of choice (because @milkandeggscom delivered this morning I threw the freshest of fresh strawberries on top with PB & cinnamon 🤤)

1. In a large mason jar or container with a secure lid, combine the oats, milk, chia seeds, and vanilla extract. Mix well. Cover with an airtight lid and store in the refrigerator for at least 4 hours to overnight.
2. When ready to eat, you can dump toppings directly into the jar or divide into a bowl and add toppings.

Ghee Scrambled Eggs with Spinach & Mandarins.🍳👅👇🏼
Crack eggs on a flat surface & add to bowl with a pinch of salt. Use a fork and poke each yoke to make whisking easier! Whisk those babies up with a fork until slightly frothy. Heat a nonstick pan to medium-high heat and melt 1 tbsp ghee. Add eggs and shake the pan while whisking the eggs – it’s going to look a bit custardy, but you’re evenly cooking your eggs. Once eggs come together in one pile, you are done! Add seasoning & enjoy.

Loaded up buttered noods. ((I think it’s technically pasta, but I like saying noods. So roll with it🤓👅))
If you make the pasta in advance, this recipe will take you approx. ten minutes to whip up! 🥳🥳 Super speedy & easy – you know, what I’m all about! ⠀⠀⠀ ⠀
INGREDIENTS:
@eatbanza pasta
1 cup broccoli, rinsed (slightly wet when it goes into the pan)
¼ cup sliced onion
½ cup sliced mushrooms from @milkandeggscom
1 @fieldroast vegan sausage
Ghee
Nutritional Yeast
Vegan Parm
Everything but the Sesame Bagel Seasoning
👉🏼Melt 1 tsp ghee in a saute pan. Imagine the pan is cut into thirds and add sliced onion, broccoli & mushrooms into their own section of the pan. ((For extra crispy mushrooms, don’t move them until about 3 minutes (or until browned) & flip.)) Stir broccoli & onion occasionally. While that’s happening, in a slightly smaller pan, cook vegan sausage according to the package. Once veggies are cooked to your liking, mix in pasta & sausage into the saute pan. Add 1 tbsp ghee, a big shake of nutritional yeast & vegan parm. Stir. Top with EBTSBS. ⠀⠀⠀ ⠀
