Patty smasher. Nice fatty grind of brisket trim always works well.

Mincing your own beef is a great way to make tasty juicy burgers as you choose what goes in and the amount of fat .

Chuck, brisket and short rib arw my choice cuts.

70/30 meat/fat is typically my mix, coarse grind.

Smoked Lamb sandwich with Mac n Cheese, red onion, and a little helping of @lanesbbqau Sorta White and Kinda Sweet sauces.

Damn Tasty!!

Lamb shoulder. Smoked over cherry wood at 300-325f for roughly 5 hours in the BGE.

Wrapped from 180f internal with a little beer, and taken till tender (approx 210f). Rested for a little then pulled.

Dorper Lamb Shoulders, dry rubbed, taken to 180f, then wrapped with a little beer until nice and tender.
Smoked over cherry wood.

300-325f for about 5 hours in the BGE.

Nice and juicy!! Easy work for the #doghouseforge cleaver.

I know some might find this a waste of time, but i have my reasons.

When using a coarse ground beef for burgers, i try not to overwork the mince. Firstly i shape a loose ball then oil and flatten, a quick shape if necessary then they are almost ready for the grill. (I give then a chill in tbe fridge)

I also tend to use very fatty grinds so the less handling the better, as you can see, patty no.5 sticks a tiny bit, the rich fat is almost melting as it warms up.
