Hand ground beef chuck makes for some very tasty burgers!!! What is your favourite cuts for burgers?? I mainly use nicely marbled chuck, i also like to use brisket and short rib.

Roughly 70/30 meat/fat, coarse grind and loosely packed.

Season with salt just before it hits the grill.

My MAPLE BACON JAM RECIPE

There is quite a lot of recipes on the web, i browsed a few, made note of the main ingredients and started to put it all together.

Ingredients:

500gm Streaky Bacon (rindless)
1 large Brown Onion
1/4 cup Brown Sugar
2 tsp Minced Garlic
1/4 tsp Cayenne Powder
1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 cup Bourbon
1/2 cup Vinegar
1/4 cup Black Coffee (tsp coffee, hot water)
1/2 cup Maple Syrup
Tomato Sauce

Start by dicing up all the bacon and browning.

Once that is done, slice the onion very thinly and add to bacon.
Continue to cook on low heat until onion is soft and translucent.

Add the brown sugar and wait until the mixture is nice and caramelised.

Now the garlic and spices go on, another 5 minutes or so.

Add bourbon, vinegar, coffee and syrup and bring to the boil. Reduce heat and simmer for 30-40 minutes until it all thickens, keep an eye on it, so that it does not burn or dry out.

Once a desired consistency, add a touch of tomato sauce, heat for another 5 minutes and then you are done.

Whisky stave smoked cheeseburger.

Hand ground beef chuck seasoned with salt. Topped with blue cheese and then sat between brioche buns and my homemade bacon jam. (Will do separate post and recipe on that)

Pork ribs rubbed with @themafiatrilogy La Familia and then finished with @lanesbbqau Kinda Sweet.

Pretty damn tasty!!!

Kettle setup using the @jgbbq offset plate. Similar to using a basket on the side, indirect, BUT, much more stable and longer burn times.
Also gives you a larger useable cook area.
Has made me use the kettle a lot more recently.

@themafiatrilogy La Familia on some pork ribs today. Look at that color!!
This does have a very different taste out of the pack, but the end result is Delicious!!! Check the videos posted earlier for finished results.

Not comp ribs, but some pretty decent home ribs.
Trim, seasoning, barbecuing using the @jgbbq offset plate and @firebrandbbq lump charcoal.

That little section that got a little dark.....well.....serves me right for not trimming that section off the top of the ribs, thought i would get away with it.

You can see the difference in texture and appearance at the start of the trimming video. During the cook you will find that it also cooks a little faster.

Early 1900's WM Beatty & Sons cleaver that i found last year.
Have only just had a nice razer edge put on it, as it was a little worse for wear.

Now to put it to good use and work on getting that patina back!! Find it very interesting the effects certain things have on the steel, like dicing up some meat and onions, has left a slight blue hue across the steel.
