5-Ingredient Salted Caramel Coconut Popcorn 🍿
.
Serves: 6-8
Makes: 13-14 cups
.
Cook Time: 15 - 25 minutes
.
Ingredients:
.
- 2 cups sweetened coconut flakes or chips
- 1 ¼ cups white granulated sugar
- ½ cup heavy cream
- ¼ tsp baking soda
- 1 5-6-oz bag plain popcorn or 13-14 cups popped popcorn
.
Directions:
.
1. Toast the coconut:
Preheat the oven to 350°F. Place the coconut on a sheet pan in an even layer. Toast in the oven 5-6 minutes, or until browned and fragrant. Remove from the oven and set aside to cool.
.
2. Make the caramel:
While the coconut toasts, in a medium pot, combine the sugar, 1 teaspoon of salt, and ½ cup of water. Cook on medium-high, stirring constantly with a heatproof spatula, 1 to 2 minutes, or until the sugar has dissolved and the mixture begins to boil. Once boiling, cook without stirring, 7 to 8 minutes, or until medium-amber in color. (Gently swirl the pot every few minutes to keep the caramelization even.) Reduce the heat to low and slowly pour in the heavy cream (be careful, as the cream will bubble up vigorously). Cook, stirring constantly, 30 seconds to 1 minute, or until thoroughly combined. Add the baking soda (be careful, as the mixture will bubble up vigorously). Cook, stirring constantly, 30 seconds to 1 minute, or until thoroughly combined. Turn off the heat.

3. Make the caramel popcorn:
Place the popcorn in a large bowl. Immediately pour the hot caramel over the popcorn and stir constantly until the popcorn is thoroughly coated. Stir in the toasted coconut. Divide between 2 baking sheets and spread into an even layer to cool. Season with salt to taste. Serve at room temperature.
