Second and more successful attempt at recreating a dish I once enjoyed at Fuyu - steamed egg custard with shiitake, shimeji and enoki mushrooms. Eggs are mixed with dashi broth (with a little sake, soy and mirin) ratio 1:1.5 then I fried the mushrooms with ginger and some dashi soy broth until the sauce thicken. Once the egg custard finished steaming for 8 minutes - put the mushroom and sauce on top. #blueapocalypsecooking #silkycustard #homecooking #Japanesecustard #mushrooms

First time I've seen this dim sum staple - steamed salted egg yolk bun in black 💣it's charcoal steamed bun! Wondered if this was an example of a food trend taking over?! Is it activated? I don't know but it was delicious. I don't think charcoal adds much flavour but it looks dramatic 😱

Made banh cuon for lunch (Vietnamese rice rolls filled with minced pork and wood ear mushrooms). The thin rice batter is usually steamed on a cloth stretched over a pot of boiling water but I quickly pan fry the rice batter at home because it's easier. Eat with nuoc cham (dipping sauce), cha lua (Vietnamese pork sausage), sliced cucumber, bean sprouts and mint! 😍 #blueapocalypsecooking #homecooking #vietnamesefood

It has been a crazy few months, but mostly amazing journey working with you @katrinamlane. Whatever happens, we get on with getting shit done and I couldn't be more happy with what we achieved on Sunday with FADS! So many incredibly special moments, thoughts, views and conversations were shared on issues and topic that matter. Thank you to everyone that has supported FADS and shared your experiences of it, means a lot to know people took away so much from FADS.
