brunch with frans this morning 🀀✨🍾 not sure exactly how many points but i made good choices for what i was working with! like, let's just say i was REALLY wanting the chicken & waffles or the breakfast pizza with sausage gravy 😏 i ordered a grapefruit mimosa and eggs benedict with ham and no hollandaise sauce. i honestly didn't miss the sauce at all- the runny yolk made it amazing πŸ‘ŒπŸΌ didn't even eat the whole flatbread! thank you all so much for your brunch recommendations πŸ’• happy saturday!

9 point dinner! currently OBSESSED with these air fried chicken nuggets 🀀 6oz (raw) chicken tenderloins (1) dipped in 3T cornflake crumbles mixed with different seasonings (2), butternut squash (0) and @jilzcrackerz used for dippin' (3) this container of egg white salad from TJ's (3) πŸ‘… i have the nutrichef airfryer and cooked these at 356 degrees for 10 minutes! this puts me at 20 points for the day so far! πŸ™ŒπŸΌ

lunch today was 7 smartpoints, and i shared the recipe on here a few days ago! it's ground turkey, onions, peppers, spaghetti squash, spinach, guac and lots of amazing spices. 🌱 super filling, and leaves me at 11 points for the day so far!

for the sake of transparency: we have friends coming into town this weekend and staying with us. it's also one of my best friend's birthdays. there will be brunches, drinking, and some splurging. the timing isn't ideal to indulge because of my indulgences last week, but that's life, right?! I'm not okay with the alternative: sticking perfectly within my points but living life on the sideline. ✌🏼

i did a thing!! i wanted to create a space where i could post recipes (with smartpoints of course πŸ˜‰), answer some frequently asked questions, share my story and my journey, etc.... so i started a little blog! this blog is NOT beautiful by any means - it's super simple and just meant to give you some more information and give me somewhere to direct you guys for different recipes i use. who knows, maybe i'll never even end up using it.
BUT, for now, i did a little post about my journey!! people frequently asked me how i started, what that moment was where i knew i needed to change my lifestyle, etc... so i did a little post outlining that 😊 check it out if you'd like! this post made me feel a little vulnerable, but i hope you like it/find it helpful!

this evening was so lovely. i spent an hour or so walking around with one of my best friends just chatting and getting our steps in and it was the best company πŸ’—πŸ‘£ who says that seeing friends has to mean eating or drinking?!

dinner tonight was 9 points and puts me at 22 for the day so far. air fried chicken tenders made with cornflake crumbs (3), roasted potatoes in olive oil (4) and parmesan/balsamic roasted green beans. πŸŒ±πŸ˜„ happy friday eve!

8 point lunch! i definitely plan on making this @skinnytaste recipe again; it's been one of my favorites. it's the "slow cooker paleo jalapeño popper chicken chili" recipe. i made it in the crockpot and each serving was 5 points, but i topped it with some goat cheese to make this 8 point lunch 😍😍 puts me at 13 points for the day so far!

breakfastttt 😍🌱🌿 it's insane how much better my body feels when I'm fueling it with healthy things. starting the day with a 5 point breakfast. a slice of rye/pumpernickel swirl bread (2), 1T whipped cream cheese (1), mixed greens, cucumber and tomato topped with a @vitalfarms poached egg (2). dis hit the spot πŸ’›πŸ³

i was REALLLYY craving an easy, filling, quick dinner - soa big ole sammich it was πŸ‘ŒπŸΌ rye/pumpernickel swirl bread (4), light mayo (1), mustard, lettuce, 4oz turkey (1), slice of FF cheese (0), 1.5oz avocado (2). had some @eatenlightened BBQ broad beans and grapes on the side! 😍😍 10 points total for dinner, 20 points for the day so far!

also, can we just talk about how ADDICTING sugar is? like, i had an off night yesterday eating-wise, and my body has been craving sweets today. it's so crazy how addictive it can be and SO quickly πŸ€” staying strong! πŸ™…πŸΌ

for those of you who follow my instagram stories, you know that yesterday was NOT a good day eating-wise. i ended up having a ton of treats at my team happy hour at work (hi crepes & brie cheese) way more than i had anticipated, and then that came with feelings of guilt. not associating food with guilt is something I'm still working on and striving for; so if you have similar feelings, you're not alone. anyways, my weigh-in day is supposed to be tomorrow, but I'm opting to skip my weigh-in tomorrow! i don't want to feel pressure, i don't want to obsess over numbers - i have had lots of social events this week, and i just want to focus on how I'm feeling over the next few days rather than what the scale says. sometimes you have to do what's best for you, because mental health is important, too. ya feel me?

starting the day with this 3 point breakfast. a cup of egg whites (1), 1oz of lite mozzarella (1) and 2oz of smoked salmon (1) with some sliced tomatoes.

i'm going out for dinner downtown tonight, so i'm trying to keep today as light as possible! last night i couldn't for the life of me decide what to prep for breakfast for work today. i ended up making two of these egg muffins - it took less than 5 minutes to throw everything together, and they're filled with protein and healthy fatttts πŸ‘ŒπŸΌπŸ’›πŸƒ this breakfast is 5 points total! here's what i did πŸ‘‡πŸΌ

in a pan, i sautéed 2oz of ham (1sp) for a couple minutes until it started browning just to bring out the flavor. then, in a bowl, i mixed together two @vitalfarms pasture-raised eggs, the ham, some chopped @organicgirl spinach, salt, pepper, and a little garlic powder. poured the mixture in two muffin tins and baked at 350 for about 20 minutes! 🍳 i loved this combination but you can easily mix it up by changing the meat, adding in peppers, onions, different spices, etc. 😊

in honor of me and charlie's 4 year anniversary today, i wanted to write a post about the importance of SUPPORT throughout this journey. it doesn't have to come in the form of a significant other; sometimes it's your friends, sometimes it's your family, sometimes it's this @instagram community. whoever it may be, that support is SO important. there's nothing like having someone (or having multiple people) who entirely understand and respect your healthy lifestyle and consistently encourage you to be the best version of yourself.

for me, that #1 supportive person in my life is charlie. he met me before i embarked on this journey, when i was 220 pounds and never had any energy or confidence, and he loved me all the same. he encourages me every single day to be the best version of myself. for those of you who don't know him, he is THIN and does nottttt need to worry about his weight. still, he spends countless hours every sunday helping me meal prep; helps me do the dishes when i'm exhausted from meal prepping all day; cuts the spaghetti squash for me because i'm not exactly strong enough; patiently and kindly walks past some of his favorite things in the grocery store because he knows having them in our home might be too tempting for me, and wakes up early on the weekends to go hiking or walking with me because he knows the difference some exercise can make for me. anyways, this is the cheesiest post ever, but the moral of the story: don't settle for anyone or anything that doesn't push you to be the best version of yourself possible πŸ’— that's all, friends!
