it’s been a cookie kind of week 🍪 tested a few new cookie flavors yesterday...and will probably do some more today, but I don’t think I’ll ever be able to beat my fave PALEO CHOCOLATE CHIP COOKIES !!! they’re so good and my boyfriend @kalebowe frequently begs me to make them just so he can eat the dough. new 💛🍋✨ LEMON POPPY SEED MUFFINS!! with a scrumptious lemon glaze and a sprinkling of poppy seeds on top 🙌🏻 this is my first new recipe in a hot second and it feels so dang good to be sharing something new with you guys! especially when it’s a collab with my favorites over at @bobsredmill — this recipe uses their oat flour and almond flour, and it’s gluten-free + vegan! so much goodness. get the recipe via the link in my profile ✨

it’s a stay-cozy-and-eat-oats kind of morning over here🌧 just went to the dog park with @the.great.hank and @kalebowe and now i wanna curl up with a book and eat these! with lots of chia seeds, this recipe is full of fiber and is super filling, and the tartness of the berry jam combined with the nut butter is perfection 😍🙏🏼 recipe below!

• 1/2 cup GF rolled oats
• 1 1/2 cup dairy-free milk
• 1 to 2 tablespoons maple syrup, to taste
• 3 tablespoons chia seeds
• 1 teaspoon vanilla extract
• 1/2 teaspoon cinnamon
• Pinch of sea salt
✨Stir together all of the ingredients in a bowl. Cover and refrigerate for at least 6 hours. Or if you want them now, combine in a small saucepan and let simmer for 5 to 10 minutes or until liquid is absorbed.
✨ For the berry jam: mash 1 cup of berries and stir in 1 tablespoon chia seeds. Cover and microwave for 2 minutes to thicken (optional).
✨ Divide the jam between two jars and then top with the chia oats. Garnish with nut butter, berries, seeds, and/or a drizzle of honey. Enjoy!
