It's that time of year to bring back pumpkin oats!! Getting beta-carotene in is so important. I recently experimented with taking a vitamin A supplement for some extra skin support, & man did things go wrong! Turns out in some select individuals like myself having too much of certain retinoids in our systems can have some ugly side effects. Specifically onycholysis, which is a fancy word for your nails separating from the nail bed! (I have had this reaction from certain medications as well.) Getting your vitamins from NATURAL sources is always best! Especially if you're that person who reacts to everything πŸ™‹πŸ» Pumpkin is packed full of natural beta-carotene which converts into vitamin A in the body. This breakfast recipe is insanely easy and perfect for fall. Enjoy! πŸ‚πŸ
Pumpkin Oats:
Β½ cup quick oats // 1 cup water
around ΒΌ cup canned pumpkin // 1 tablespoon @nutiva chia seeds // 2 tablespoons @mccormickspice saigon cinnamon (or less if you're not a cinnamon-head like me // a TINY pinch of nutmeg (it goes a very long way) // a dash of the sweetener of your choice (brown sugar or maple syrup would probably be the most complimentary)...i skip this step // enjoy as is or top with cacao nibs/pumpkin seeds/nuts πŸ‚πŸ

While it's always good to limit as many refined sugars as we can, natural sugars from fruit don't count! They're full of fiber which keeps the sugars from hitting your bloodstream too quickly. Can't get enough this week!

As a recently diagnosed PCOS gal, I'm keeping up my cinnamon obsession! It's so powerful at balancing blood sugar, & subsequently hormones. Fiber is also super crucial for keeping insulin levels in check, & what better form to get it in than oats, raspberries, & chia seeds?! This breakfast contains over half of the daily fiber requirement. Yes please!

1/2 cup @betteroats quick oats // 1 cup plant milk or water (I like using Rice Dream since it's fortified with calcium & vitamin D, & gives it a nice creamy taste) // sweet Saigon cinnamon to taste, such as the variety from @mccormickspice // 1 tablespoon of @nutiva chia seeds for omega 3s // Frozen or fresh raspberries (I like using frozen so that after thawing them the extra juices can all be stirred in as well)

Happy weekend my friends. I'm pondering some dietary changes over here. I was recently diagnosed with both PCOS & Hashimoto's Disease. It was suggested to me (on top of my medication) to try following an "auto-immune diet", limiting certain foods including legumes, wheat, tomatoes/eggplant/other nightshade vegetables. These are some of my FAVORITE foods. It was actually suggested to me to adopt a diet with an emphasis on more animal proteins, fruits, & vegetables. I'm majorly struggling with how to proceed as a 6-year vegetarian. I don't feel prepared to give up all of my favorite foods entirely (how can I stop eating peanut butter & chickpeas?!). For now, perhaps I will simply try to reduce these foods a little bit day to day & see if it makes any real difference. For anyone out there with either PCOS or Hashimoto's, what sort of diet do you follow to keep your hormones &/or antibodies in check? All thoughts appreciated!

Eating healthy does not have to be expensive! I buy 30 days worth of oats for $3.50. Not bad for breakfast for a month! Cans of chickpeas & beans are very cheap, even organic varieties. There are many budget-friendly healthy eats. I love having them around in bulk in the pantry so I'm never without options. What foods do you buy in bulk?

So many inflammatory disorders can be drastically improved with a lower sugar intake. Whether it's a skin issue or a digestive issue, less sugar can only help. Happy Friday all! I can't get enough peanut butter lately. As someone who's allergic to tree nuts & can't do almonds/cashews/walnuts/hazelnuts etc., I often end up explaining that peanuts aren't actually nuts, they're legumes (lucky me!). πŸ₯œ
So many health foods contain tree nuts which gets frustrating when you're looking for great granolas or bars. On the bright side that means I get to have more fun making my own snacks at home! Do you have any food allergies? What are your alternatives?
