Holidays and celebrations are a struggle since we've been focusing on nutrition. Add in Ash Wednesday dietary restrictions and it's even harder! Our solution: find nutrition plan approved meals and celebrate on Feb 13!

Cast iron seared filet mignon topped with sautéed mushrooms and onions that were cooked in Worcestershire sauce. Yum-O! Add roasted sweet potatoes and spring mix on the side. 😍🤤 The best part: No oil! Seared only with a few spritz of cooking spray and the magic of cast iron.

@mindovermunch posted a new low-carb meal prep video and I *had* to try the Sriracha Meatballs!

Followed her recipe for the meatballs but omitted the egg since I'm not eating egg yolks on my current nutrition plan.

Sauce was a rendition of her's: @traderjoes plum diced tomatoes, ground ginger, Sriracha, apple cider vinegar, a diced onion, and red pepper flakes. Threw in a small tbsp of @kerrygoldusa butter at the end for that velvety texture that I love with sauces.

Wilted spinach in half of the sauce and topped it over @housefoodsamerica tofu noodles to keep it low-carb. Da 💣! Overall, made about 2.25 - 2.5 servings of sauce and meatballs!

Sundays are for protein pancakes! Love love love these pancakes, and today, I threw in spinach to test out if you'd be able to taste it. Verdict: you won't! Protein AND veggies packed?! Talk about a win-win.

Make oat flour, and toss in cottage cheese, egg whites, stevia, and cinnamon into a blender. Blitz til mixed and add spinach if desired. Cook like you would normal pancakes and enjoy with your choice of sweetener!

Weekends are for meal prep and semi-homemade lunches! Spent all morning doing errands that by the time I came home, I just wanted to eat!

Enter: Rotisserie Chicken Salad. Bought a rotisserie chicken at @bjswholesale while stocking up on house supplies. Roasted up some sweet potatoes with s+p and garlic powder, enjoyed over spring mix with spinach and some pecans. Topped with an oil-free balsamic dressing! 10/10 - easy and delicious!

SUPERBOWL LII! Picking foods for game day was tough given my new nutritional constraints this year.

Went with a simple burger seasoned with garlic powder, onion powder, s+p. Assembled with lettuce, @ghughessugarfree BBQ sauce, @foodforlifebaking Ezekiel bread coated onion rings, and simple whole wheat buns from @wegmans.

And can't have a superbowl party without buffalo sauce! Made roasted buffalo cauliflower bites to bring some heat! Everything tasted indulgent but fit my meal plan!

Had a Ton of beets a couple of weeks ago while visiting Niagara-on-the-Lake, ON. Forgot how delicious they were, so I HAD to come home and make a dish that showcased these beauties.

@inagarten's Balsamic Roasted Beets and Arugula Salad. Made my own oil-free balsamic vinegarette to keep this dinner low fat. Tossed the arugula in the vinegarette, and let the roasted beets soak in it as well after coming out of the oven. Threw on grilled chicken for protein and @traderjoes sweet and spicy cashews for crunch! 8/10

It's hard to figure out potluck ideas that people might like when you are trying to eat healthy.

Enter: Roasted Spiced Chickpeas! Canned chickpeas drained, rinsed, and dried. Then tossed in olive oil, cayenne, chili powder, cumin, paprika, and salt. Roast at 400 F til crispy! Easy with the perfect kick of heat! When there just right, they have the crunch of a good nut without all the fat!

Been slow with cooking/posting since I've been working longer days and trying spend the extra time in the gym.

To fix that, I tried "meal prepping" this week with crock pot pulled pork! Spent time (read: way too long) trimming as much fat as possible off a pork shoulder cut, seasoned with chopped onions and garlic, cayenne, chili powder, tomato paste, stevia, apple cider vinegar, and water. S + P to taste. No need for extra oil! Cooked on low for 8-10 hours.

Prepared as an open-faced sandwich using @foodforlifebaking Ezekiel original sprouted bread and @traderjoes spring green mix for the veg. Toss the pulled pork with @ghughessugarfree BBQ Sauce (I used Hickory for extra flavor), and devour!

Made pan seared Sawai fish to compliment - same seasonings, and @traderjoes chili lime seasoning for a bit of extra heat.

Gotta have some green, so I just sliced some cukes on the side.
