❄️Needed to rustle up a winter warmer seeing as it's been snowing here in Paris! ❄️ Roasted pumpkin, carrot and cauliflower curry with coconut rice 🥕🌝 If you're interested in the recipe see below! 🌬 •Skin, scoop and slice the pumpkin into manageable segments, cut carrots lengthways and toss into a bowl of olive oil, grated fresh ginger, half a squeezed lemon, salt and pepper, and put it all onto a baking tray, add a drizzle of maple syrup (or anything sweet) and pop in the oven. •Fry up onions, garlic and once softened and more golden add bite size cauliflower chunks. •Add a tsp of turmeric, cumin, coriander, salt and pepper and add a little water in the pan to prevent congealing and allow to simmer •Put rice to boil in a separate pan or rice cooker, but with coconut milk instead of, or mixed with water •When the roasted veggies are done add them to the simmering onions and cauliflower, and add canned tomatoes, a tablespoon of red curry paste and a handful of spinach (or any greens if you have to hand!), add more water and spices as necessary • just as you take it off the boil, add in a small amount of soy cream or any remaining coconut milk to make it extra creamy • plate up and eat up! 🍛 >>and of course add seeds and chopped nuts as desired too!<< 🥜

🥗Steamy green bulgar wheat tabbouleh with spicy sweet potato wedges 🍠 The tabbouleh greens are courgettes, cavolo nero kale and broccoli florets all lightly steamed, with cubes of beetroot and garlic and herb flavoured tofu chunks tossed in with boiled Bulgar wheat 🌱Sweet potato wedges peeled and roasted with a drizzle of olive oil, salt, a lot of black pepper, and a pinch of cayenne pepper for that spice 🌶Super delicious and easy as anything! 👌

I proclaim this 🌱The Garden of Gnocchi 🌱 I promise that it's very filling, refreshing and oh so easy to make! See below for the recipe 🌝 •Throw some diced shallot and a sliced garlic clove into the pan with a little drizzle of olive oil. •When they start to golden, add a handful of diced up portabello mushrooms and stir in. •Meanwhile throw some gnocchi into some boiling water with a little stock and wait til they bob to the surface, should take around 3-4 mins, then drain. •Lightly steam bite-size chunks of broccoli, thinly sliced and diced courgettes, and washed and torn spinach. •When hot but still crunchy, add veg to the frying pan and immediately take off the heat. •Mix all the veg together, add salt, pepper, chilli and some thyme. •Add in the gnocchi, a sprinkling of golden linseed and add a drizzle of olive oil.

🥒Vegan potato gratin with raw kale and courgette salad 🥗 The gratin sauce was made by mixing coconut milk and almond milk with a sprinkle of cinnamon, salt and pepper, adding pre-caramelised shallots and diced potatoes and topped em with flax seeds, sesame seeds and yesterdays left over mung beans and baked in the oven until cooked through. 🌱The kale salad was massaged with lemon juice and sea salt, and raw thin slices of courgette were added with a olive oil based ginger, lemon and chilli dressing 🍋 Add whatever seeds are in the cupboard! 🌶

🥗Rice roasted stir fry! 🍚 sticky and sweet and oh so goood 🌻Courgettes, shallots, mushrooms, tofu and sesame seeds roasted in a garlicky soy sauce with agave syrup added for some extra sweetness....with coconut rice and steamed kale with a little drizzle of lemon to finish it off 🍋 POW 💥.….................

❄️Hearty golden winter porridge! 🌙A mix of small and large #organic oats cooked with almond milk, sprinkled on top for extra crunch we have golden flaxseed, chia seeds (both packed with omega 3!🌱) and sesame seeds (good source of protein! 💪), mixed in some agave syrup and popped on some dark chocolate chunks to finish it off!🍫...............................
