Pickled plum (umezuke) update! This is actually my second batch, I had to throw the first batch out because of some... contamination issues of the many-legged kind. 😱 Anyway. They are super crisp, salty, and sour. They remind me of sour, firm olives. Delicious!
They didn't release as much juice (umezu) as I expected, only a spoonful or two, and they hardly softened at all. These were cured for a few weeks, and now they'll live in the fridge until the rain stops, then I'll dry a few to see if I can make umeboshi. And I'll be stalking the market to see if they get any more ume, since they should be in peak season about now. 🍱💯
